Halve the red onion. Chop one half finely. Cut the other half into thin crescents. Put the halves in a bowl, pour boiling water over them and leave to soak for a while.
Put the mince in a bowl with the finely chopped onion, garlic and chipotle and knead well. Spread a quarter of the mince mixture on a tortilla and press down well.
Put a frying pan over a high heat. Cook the tortilla, mince side down, until golden brown. Press down well with a spatula so that the mince sticks to the tortilla.
Turn the tortilla carefully and sprinkle with cheddar. Cover the frying pan and cook until the cheese has melted.
Drain the onions and squeeze in half a lime, season with salt and pepper. Cut the avocado into pretty crescents. Remove the tortilla from the pan and garnish with the avocado, coriander, red onion, jalapeno pepper and creme fraiche. Enjoy!
