This quick and easy snack is great for any festive occasion. You use phyllo dough which is brushed with butter and than baked for an extra crispy effect. Add a creamy guacamole and some delicious shrimps and you have a great snack at your hands.
Prepare(30 mins) (can be done a few hours before) Heat the oven to 180˚C/350˚F . Melt the butter in a small sauce pan on low. Put two sheets of phyllo dough on a large cutting board and brush them with the melted butter. Put the other two sheets on top and also brush with the butter. Dust the sheets lightly with cayenne pepper to form a little film on top. Don't overdo this!
Cut the dough in 24 pcs of roughly 5 x 5 cm/2 x 2 inch each. Put them next to each other on a baking tray lined with baking paper and bake them in the oven for about 9 minutes or until crispy and golden.
Peel the avocado and remove the stone. Mash the avocado meat with a fork and add the creme fraiche, chili pepper, cilantro, lime and some salt. Cover the guacamole with foil and put in the fridge until further use. Cut the cherry tomatoes in thin slices, remove most of the seeds and watery insidesand keep them cool until you're ready to use it.
Put some guacamole on the baked filo. Place some shrimps on top and garnish with the cherry tomatoes.
Notes
The phyllo dough does become quite crispy and because it is so thin it does break quickly. So be sure to not overload the phyllo and serve right away
You can also use a regular guacamole for serving with the shrimps.
