For the glaze, put the cranberry compote, chipotle, cinnamon sticks and brown sugar in a saucepan and bring to the boil. Allow the glaze to simmer for a few minutes. Remove the cinnamon sticks.
Wash and scrape the carrots.
Place the carrots in a large ovenproof dish.
Season the ham with salt and pepper. Place the ham on top of the carrots.
Coat the ham bone generously with the glaze. Place in the oven for 45 to 50 minutes.
Brush the ham with the glaze every 10 minutes and stir the carrots in the glaze and any excess liquid. Remove from the oven and leave to rest for a further 10 minutes. Delicious with roasted potatoes!
