Making cauliflower rice is a great option if you want to increase your vegetable intake and limit the amount of carbs you're consuming. Usually one head of cauliflower - depending on the size - will make around 4-6 portions
Break the cauliflower into florets separately and add to the bowl of the food processor in batches. Too much will cause you to turn it for too long, resulting in the cauliflower turning to a puree. Pulse briefly until you reach the desired consistency.
Remove from the machine and repeat with the remaining cauliflower.
If eating it cold you are now done.
If you want to eat the cauliflower warm, heat a large skillet with some coconut oil or olive oil. Use a couple of tablespoons. The cauliflower will absorb some of the fat. Fry for 5-10 minutes and add pepper and salt, spices and fresh herbs to taste
