This delicious recipe for making apple compote with warm spices like cinnamon, cardamom and star anise is my favorite recipe. You can use it for spooning in your breakfast in the morning or serve it with pork chops for a dinner.
Peel all the apples, remove the cores and cut into pieces. Don't make the pieces too big, as it will just take longer to cook until tender.
Place all the apple pieces in a large saucepan. Add a little water and orange juice, sugar, star anise, cinnamon and cardamom.
When it comes to a boil, reduce the heat to low and simmer for 30-45 minutes. Check periodically to see if the apples are done. The longer you let it cook, the darker your apple compote will get.
