Pour the yogurt into a bowl and press the garlic into the yogurt with a garlic press. Finely chop the dill and add to the yogurt. Grate the cucumber, squeeze the excess liquid from the grated cucumber and add to the yogurt. Season with salt and pepper and a generous squeeze of lemon juice.
Slice the tomato. Cut the halloumi into thick slices. Heat a frying pan. Rub the halloumi slices with oil and fry them in a hot pan until golden brown.
Heat the honey and chilli flakes in a small saucepan. Cut the rolls in half and fry in a pan, cut side down, until golden brown. Spread a dollop of tzatziki on each roll. Top with a slice of lettuce, a tomato and the haloumi. Drizzle generously with the spicy honey. Delicious with vinegar chips. Enjoy!
