If you love French toast you're going to love this french toast casserole with lemon curd and strawberries. It's super easy to make, delicious straight out of the dish or serve with whipped cream or vanilla ice cream
Take your slices of brioche bread and spread them generously with lemon curd. Cut the slices diagonally in two and place them (long side down) in an oven dish. Don't put the slices too close together as you want some of the fruit to be put in between the slices.
Clean your strawberries, slices them into quarters and spread them over the brioche bread. You can use different kinds of fruits. I initially wanted to use rhubarb but no rhubarb yet.. If you do use rhubarb, maybe put a little more sugar in the egg-cream mixture.
Put the milk, cream, egg yolks and sugar together and whisk to combine. If you do not have egg yolks leftover you can also use two whole eggs instead. Pour the cream mixture over the brioche and sprinkle with the chopped pistachio. Let it stand for about 10 minutes so the cream can soak into the brioche a bit.
Cover the ovendish with aluminiumfoil and put in the oven for about 20 minutes. Remove the foil and put back in the oven for a further 15 minutes or until the brioche is nicely browned. Enjoy!
Notes
You can make this French toast casserole using any kind of leftover stale bread you like. I went with brioche as that makes the dish extra sweet.
If using regular bread you might want to add a bit more of the lemon curd for extra sweetness
Eat the french toast with lemon curd right away. It's best served luke warm
You can store it for 1-2 days in the fridge after making. But it won't be so crispy anymore.
Strawberries can be replaced for any kind of other (soft) fruit you like
