Sprinkel some salt on the eggplant slices and grill them briefly with some of the oil in a grillpan or frying pan. Normally one minute for each side, should be fine
Take the eggplant out of the pan and put them on a baking tin covered with baking paper. Drop some grated cheese on every slice and sprinkle some freshly ground black pepper on top
Put the baking tin in the oven and grill the slices until the cheese has melted and has a crispy coating
Serve your eggplant snacks together with some other snacks and a beer or as a side dish.
