A very tasty and easy basic recipe for all your decorated party cookies. The number of cookies you can make depends on the cutters you use and how thick or thin you roll out the dough. The cookies keep wel in an airtight container for at least 2 weeks.
Allow the butter to come to room temperature so that it is easier to mix with the other ingredients. Cream the butter with the sugar. Add the egg and vanilla extract and mix until completely incorporated. Add the flour to the mixture and knead with a mixer until smooth and firm. Of course, you can do this with your hands if you do not have a mixer.
Let the dough chill in the refrigerator for at least an hour. To make it easier to cut out the cookies, I always make the dough as flat and rectangular as possible with my hands. Wrap in plastic wrap and refrigerate for at least an hour.
Meanwhile, preheat the oven to 180˚C/350˚F (conventional oven). Once the dough has cooled sufficiently, roll it out to about 0.5 cm thick. Cut out shapes from the dough and place them on a baking sheet lined with baking paper. Make sure there is some space between the cookies so they don't stick together.
Bake the cookies in the oven for about 10-12 minutes, depending on their thickness, and then let them cool a bit before transferring them to a cake rack. This is because the cookies are still soft when they come out of the oven and can easily break! If you are unsure if your cookies are done, look for the following: when the edges of the cookies start to turn light brown, they are done.
If you want to decorate the cookies, it is important that they are well cooled!

If you want to make royal icing that is very simple to do. You need a good amount of icing sugar. Think something like 200-250 gram (7-9 oz) and a bit of water. Add a tablespoon or teaspoon of water at the time and stir until the mixture has the right consistency.
For additional flavors you can use lemon juice instead of water or orange juice.

Decorate the icing while it is still wet with sprinkles, mini easter eggs or chocolate chunks.
