Banana is a great sweetener for your granola. This is an easy way to make a healthier version of your granola. Just make sure your bananas are ripe for the tastiest granola. This recipe will make roughly 12 portions.
Mash the bananas well with a fork or use a hand blender. Mix the banana puree with the olive oil.
Combine all other ingredients in a large bowl. Stir in the banana mixture well.
Spread the mixture on a baking sheet lined with parchment paper and bake in the oven for about 20 minutes. Make sure the layer is not too thick. If necessary bake it in two batches.
After 10 minutes, mix the layer up with a spoon. When golden brown, remove from the oven and allow to cool completely before storing in an airtight container.
