Easy Potato Salad With Sausages

This delicious and easy potato salad with sausages is one of my favorite summer recipes. It’s quite heavy and will fill you up for a good time. But with the gherkins and the other fresher elements inside it is still a really good dish for summer too. If you’re looking for a more classic potato salad?

Why I Love This Recipe

I have a soft spot for a really good sausage and the combination of sausages in this potato salad is so good! I usually make it for dinner as it is pretty heavy for a side dish. But if you wanted you can absolutely also make this for barbecue season. No problem at all. It’s also super easy to make and with the mustard style dressing this is one of my summer favorites.

Recipe Ingredients

  • Potatoes – use waxy potatoes to make sure they do not fall apart when cooking them
  • Bacon – I did mention this is not a light salad right?
  • Sausages – you can use whatever favorite sausage you have to add to the salad.
  • Pineapple – I love adding pineapple to this potato salad but I happen to know not everyone loves fruit in their salad. If you absolutely hate it, you can leave the pineapple out, but I would urge you to keep it in. It’s a great addition!
  • Chili – For a bit of heat I add a few red chili peppers. Again, totally optional, but highly recommended!

How To Make The Potato Salad With Sausage

Making this potato salad is no rocket science. It just involves a bit of chopping to make sure all ingredients are bite-sized. It does help to make the salad a bit in advance as the flavors get even better after a few hours. Or make it the day before you want to serve this. That’s totally fine too. If you want to you can even replace the regular potatoes with sweet potatoes, although the flavor may be completely different.

Potato salad with sausages

Ingredients

  • 1 kg potatoes cleaned and in smaller pieces
  • 200 gr bacon cubes
  • 2 sausages roughly 2 sausages per kind
  • 5-6 gherkins in cubes
  • 1/2 fresh pineapple in cubes
  • chives chopped
  • 2 red chilli peppers in small pieces
  • 3 spring onions in rings
  • 4 eggs boiled

Dressing

  • 4-5 tbsp mayonnaise
  • 2 tbsp spicy mustard or to your liking
  • 1 tbsp apple vinegar
  • pepper
  • salt
  • lemon juice

Instructions

  1. Wash the potatoes and cut in even sized pieces. Place in a pan and cook until done. Drain and leave to cool.
  2. Remove the skins of the sausage and roll into small balls. Bake those in a frying pan with the bacon.
  3. Take a large bowl and place all ingredients for the salads in. Stir everything through.
  4. For the dressing mix the ingredients together and adjust for taste. Stir through the potato salad and serve
