How to make easy raisin bread french toast with banana

You have french toast and then there is this french toast. Made with (leftover) raisin bread and served with banana and chocolate. Now that's what I call delicious! For breakfast or dessert!

This is without a doubt my favorite french toast recipe. Raisin bread french toast with banana and chocolate. It’s perfect around the holidays but can really be eaten any time of year. You’re gonna love it!

Raisin bread french toast

First of all making this raisin bread french toast is super simple. You make it with raisin bread but it is also fantastic with stollen with marzipan in it. It’s my favorite way to use up leftover bread slices. 

Do you have leftover old currant bread and want to incorporate it into something? Then these currant bread French toast are an absolute must. Addictively delicious and secretly tastier than French toast made from regular bread!

Wentelteefjes

Now the funny part that you probably don’t know is that here in the Netherlands we call french toast “wentelteefjes” Which – if translated literally – means something like ‘turn-around bitches’. I mean… how’s that for a funny name?

What ingredients go into the french toast

Making this raisin bread french toast is very simple. You’ll need the following items:

  • cinnamon raisin bread or regular raisin bread
  • vanilla extract
  • brown sugar
  • eggs
  • heavy cream
  • cinnamon, cardamom, ginger
  • banana
  • chocolate

For sweetening the french toast after baking you can add some maple syrup or honey or just use icing sugar. 

Making it

Now that you know the ingredients it is time to make the raisin bread french toast. You take a large bowl and add the eggs and the heavy cream to it. Add a bit of vanilla extract, the honey or maple syrup and the spices. Whisk it with a fork until it is well blended. It’s easiest to pour egg mixture into a shallow dish so it is easier to dip the bread in.

Now you take the slices of bread and you lay them in the egg mixture until the bread has soaked up the liquid. Don’t let them in too long though, you don’t want it to get soggy. 

Place a large skillet on medium heat and melt butter in the pan. Once the butter is melted place the slice of cinnamon-raisin bread into the hot skillet and slowly let it bake until it is golden brown on one side. Flip the slice over and bake the other side as well. Place on a plate or baking sheet. 

Now continue making the rest of the bread slices until they are all golden brown.

Melt the chocolate and serve the raisin bread french toast with chopped banana slices and melted chocolate. Add sugar of choice if you want to.

You bake the French toast for about 3 to 4 minutes per side or until the first side is golden brown. Then turn it over and bake the other side.

 No, they are simply best when warm and freshly baked. So after baking, eat them immediately.  

Yes, you can replace the cream with regular milk or almond milk.  

Yes you can. In that case you replace the eggs with 1 tbsp cornstarch or arrowroot. This thickens the milk (in this case use about 200 ml almond milk) during baking. Whisk the arrowroot well into the mixture and season with cinnamon, some sugar and any other spices.

Ingredients

  • 3 eggs medium
  • 1 tbsp heavy cream
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/2 tsp ginger
  • 4 slices raisin bread
  • 25 gr butter for baking
  • 1 banana ripe
  • 75 gr dark chocolate melted

Steps on how to make the french toast

  1. First make the batter for the French toast by mixing the eggs with the whipping cream, honey, vanilla extract and spices. Place the four slices of bread into this one at a time and let them soak up the mixture for a while.
  2. Meanwhile, heat butter in a frying pan and fry the French toast in turns until brown. Serve with banana slices and drizzle melted chocolate on top. Chocolate is best melted au bain-marie. Heat a pan of water, bring to a boil and put the chocolate in a heatproof bowl. Let this melt over the pan of water.

Notes

  • Of course you can make this french toast with other bread as well but part of the appeal is using raisin bread. You can use stuffed raisin bread or leftover stollen as well.
  • Also delicious served with strawberries, raspberries or another soft fruit of your choice
  • I would advise to eat it right away. Storing french toast is usually not a good idea.
