Pasta salad with steak
This easy pasta salad with steak can serve as a delicious main dish for dinner or for lunch. You can use leftover steak for this or buy the steak specifically to serve over the pasta. It might be a bit decadent but it is so good. Heavy on the meat though, but that fine every once in a while right? I love this pasta salad and the good news is that it can easily be adjusted to your preferences.
What you need for the pasta salad
For making the pasta salad with steak you will need the following ingredients. It helps to have them all at room temperature.
- steak – good quality steak is essential. I love mine medium rare but you can cook the steak any way you want
- cherry tomatoes – there is not a lot of vegetables in this dish, apart from the tomatoes and the bell pepper
- bell peppers – roasted. You can roast the red bell pepper yourself on an open fire or simply buy them roasted
- Pasta – I have used penne pasta for this dish which I like best.
- chorizo – adding the chorizo is totally optional, but it does add a lovely crunch to the pasta salad so I would highly recommend using it.
For the creamy dressing you use mayonnaise and a spicy mustard. You can use vinegar (balsamic vinegar or another sweet kind of vinegar) or some lime juice or lemon juice. Delicious to serve with fresh basil or some garden cress as I did here.
How to make the steak pasta salad recipe
Making the pasta salad with steak is pretty straightforward. The hero of the dish is a tender steak so make sure you get a good quality meat. You start the making of the dish by cooking the steak and boiling the pasta. Rinse the pasta under cold water after cooking, so stop the cooking process. The pasta needs to cool down further and you need to rest the steak after cooking as well. Since it is a salad recipe you do eat the steak cold. Optional of course. You could absolutely eat this warm as well. Once the steak has rested you make thin slices out of it for ease of serving.
For mixing the pasta you need a large bowl to add all the ingredients in. I like to optionally add a bit of olive oil to the pasta once cooked. That makes it even more delicious. You could also already add half of the dressing if you prefer.
Some other great additions
While the pasta salad with steak is already pretty delicious as it is, you can easily add some things to the bowl. Think about adding more fresh herbs, red onion, black olives or some sliced onions. Crispy bacon instead of the crispy chorizo is another easy swap.
Because there are not a huge amount of vegetables in the pasta salad I like to serve this with additional fresh vegetables. Think a big green salad. It’s a perfect dish for summer picnics as well

Pasta salad with steak and chorizo
Ingredients
- 125 grams pasta
- 150 grams steak
- 1-2 roasted bell pepper sliced in thin strips
- 100 grams chorizo cut in small dices
- 1 spring onion cut into small rings
- cress
- 150 gr cherry tomatoes washed and sliced in quarters
Dressing
- 2 tbsp mayonnaise
- 1 tbsp mustard spicy
- 1 tbsp vinegar
- pepper
- salt
How to make the pasta salad with steak
- Boil the pasta according to package instructions, drain and set aside.
- Cook the steak to your wishes and set aside to rest for five to ten minutes. Then slice the beef in thin strips
- Cook the chorizo in a dry frying pan (add no fat) until crispy, then place them on some paper kitchen towel to drain.
- Put together all ingredients for the dressing and mix them well
- Put all ingredients (except the beef) in a big bowl and mix together well. Finish of by topping the salad with the finely sliced strips of beef.

How often do you add steak to your pasta? It might sounds a bit strange but it totally works!
There is Mexican style chorizo which is raw pork uncooked and there is Spanish style chorizo which is dry cured or smoke cured pork mild to hot spicy depending on which country you are procuring it from. There is also Portuguese chourico a hot and spicy smoke cured sausage that has the flavor profile of Spanish chorizo but uses different spices.
I used the Spanish style in this dish.
