The Christmas classic you’ll want to try this year is this oven baked ham with sticky cranberry chipotle marmalade. It’s your Christmas ham recipe but with a delicious twist! You’ve probably seen plenty of honey baked ham recipes floating around. This one goes one step further and makes for the best ham. it wouldn’t look all that weird for Easter dinner either by the way.
Oven baked ham with cranberry chipotle glaze
A Christmas classic is, of course, an glazed ham. Around this time of year you will find loads of honey glazed hams. Some will use a bone-in ham, some will use a ready cooked ham and some will use a raw ham. All of those are no doubt quite delicious but this recipe is slightly different. I’ve created a cranberry chipotle glaze which makes this a sweet and spicy alternative. But it is still one of the tastiest and easiest recipes to serve during the holiday season.
The most popular recipe at Christmas is probably the leg of lamb, and of course it’s great, but this glazed ham is definitely easier to make and since the ham is already cooked there is not much that can go wrong. Leftover ham is also delicious to serve the next day. Just add some ham slices to your breakfast table for instance. Super delicious for all special occasions!
What goes into the glazed ham
You can buy a fully cooked ham. So there’s no need to worry about it. The main purpose of the recipe is to make a nice sticky coating on the outside. You will need the following ingredients
- Ham – I used a boneless ham of about 2kg. It’s nice to use the rest of it too, so if you have any leftovers, that’s just delicious!
- Cranberry compote – you can also use jarred cranberry jam for this.
- Chipotle (in adobo sauce) – you can buy this in the supermarket these days from the La Morena brand.
- Brown sugar – you can use white sugar, but the brown is really tasty in this recipe.
- Carrots – you can use plain carrots, but if you can find colored carrots it looks extra nice. Tastes the same, of course, but looks are important too, right?
You start by making the ham glaze recipe by heating the ingredients on medium heat in a small saucepan. Make sure it cooks and thickens a bit. If the chipotle is too coarse, cut it into smaller pieces to make it easier to spread. If it is too sweet and heavy you can add a bit of lemon juice to brighten it up. If you happen to have a ham with a big layer of fat you can score the fat in a diamond pattern. Use a sharp knife for that. In addition you can add whole cloves in the centre of each diamond. It kind of looks cute and adds flavor as well. Just make sure you tell your guests not to bite on the cloves. Scoring it with a knife will also ensure the glaze gets into the fat part better. But it is totally optional. I did not do it this time.
Glaze and bake
Place the cleaned carrots in a baking dish or large roasting pan and place ham on top. Brush glaze on the surface of the ham generously every 10 minutes or so while the ham is baking. Don’t be stingy with the glaze, as it will give your ham a delicious flavor. It will make the outside of the ham shiny and glossy too. This is a pretty simple glaze to make
When the ham is ready to come out of the oven, stir the carrots through the pan drippings, ham juice and glaze. Leave the ham to rest for 10 minutes before carving. You can cover the ham with aluminum foil to keep the heat in.
Serve with roasted potatoes and cranberry sauce for a main course. It’s also a good idea to increase the total number of vegetables as the 500 gram of carrots is not enough for 4 people. I love adding an extra vegetable side dish (like green beans for instance) for Christmas dinner. I find this the best glazed ham recipe but that might just be me.

Oven baked ham with a chipotle cranberry glaze
Ingredients
- 2 kg cooked ham
- 6 tbsp cranberry compote
- 3 tsp chipotle in adobo sauce
- 2 cinnamon sticks
- 2 tbsp brown sugar
- 500 gr carrots colored or regular
- Salt and pepper

- Preheat the oven to 200˚C/400˚F
- For the glaze, put the cranberry compote, chipotle, cinnamon sticks and brown sugar in a saucepan and bring to the boil. Allow the glaze to simmer for a few minutes. Remove the cinnamon sticks.
- Wash and scrape the carrots.
- Place the carrots in a large ovenproof dish.
- Season the ham with salt and pepper. Place the ham on top of the carrots.
- Coat the ham bone generously with the glaze. Place in the oven for 45 to 50 minutes.
- Brush the ham with the glaze every 10 minutes and stir the carrots in the glaze and any excess liquid. Remove from the oven and leave to rest for a further 10 minutes. Delicious with roasted potatoes!
