Quick phyllo dough snack with shrimps

This quick and easy snack is great for any festive occasion. You use phyllo dough which is brushed with butter and than baked for an extra crispy effect. Add a creamy guacamole and some delicious shrimps and you have a great snack at your hands.

Are you looking for an easy snack to serve over the holidays, for easter or a birthday party? This crispy phyllo dough snack is perfect for that. It’s delicious with a nice glass of champagne or just on it’s own.

You don’t need a ton of ingredients for making the snack but there are a couple of things to keep in mind when making this.

While I love phyllo dough – like in this insanely good baklava – there are a couple of downsides to this recipe. First is that you can store the phyllo, once baked in an airtight container and keep it for 2-3 days. It should stay crisp if you’ve made sure to let it cool down completely.

But once covered with the avocado cream it will start to become soft quite quickly. So the best way to serve this is either with the avocado next to it, so people can scoop it on themselves or serve it immediately once made.

Also great with puff pastry

I love the crispness of phyllo but if you want a bit more time you can also use puff pastry for making this. Puff pastry will also become soggy if you leave it for too long but it is a little more resilient that phyllo dough snacks.

Vary with the guacamole

The guacamole is made with creme fraiche which I had never done before but it works really well. It gives it a good consistency and maybe a little less heavy then avocado only. It is seasoned with fresh cilantro, chili pepper and some lime juice and of course salt and pepper. Combined with the Dutch shrimps it’s absolutely delicious.

What are Dutch shrimps?

This particular variety of shrimps is not something you’ll be able to find anywhere. Dutch shrimps are tiny and are also called grey shrimps, although I would probably call them pink rather than grey. It’s a Dutch specialty and they live in the North Sea. But you can use any small shrimp you like. It doesn’t have to be Dutch shrimps.

Phyllo dough snack with shrimps

Ingredients

  • 75 gr butter
  • 4 sheets phyllo dough 20 x 30 cm
  • 1 tsp cayenne pepper
  • 1 ripe avocado
  • 100 ml creme fraiche
  • 2 cm chili pepper seeds removed, finely chopped
  • 1 tbsp cilantro chopped
  • 2 tsp lime juice
  • 10-12 cherry tomatoes
  • 100 gr shrimps I used the small Dutch shrimps but any tasty shrimps will do.

  1. Prepare(30 mins) (can be done a few hours before) Heat the oven to 180˚C/350˚F . Melt the butter in a small sauce pan on low. Put two sheets of phyllo dough on a large cutting board and brush them with the melted butter. Put the other two sheets on top and also brush with the butter. Dust the sheets lightly with cayenne pepper to form a little film on top. Don't overdo this!
  2. Cut the dough in 24 pcs of roughly 5 x 5 cm/2 x 2 inch each. Put them next to each other on a baking tray lined with baking paper and bake them in the oven for about 9 minutes or until crispy and golden.
  3. Peel the avocado and remove the stone. Mash the avocado meat with a fork and add the creme fraiche, chili pepper, cilantro, lime and some salt. Cover the guacamole with foil and put in the fridge until further use. Cut the cherry tomatoes in thin slices, remove most of the seeds and watery insidesand keep them cool until you're ready to use it.
  4. Put some guacamole on the baked filo. Place some shrimps on top and garnish with the cherry tomatoes.

Notes

  • The phyllo dough does become quite crispy and because it is so thin it does break quickly. So be sure to not overload the phyllo and serve right away
  • You can also use a regular guacamole for serving with the shrimps.
