Making your own chicken bone broth is delicious and very easy. I use a slow cooker but you can also use an instant pot or a regular pan for making this. I suppose you could even use a pressure cooker for making this but I haven’t tried that yet.
Making your own chicken bone broth
After making my own beef stock a long time ago, it was time to start making chicken bone broth. Simply because I use chicken broth a lot more in my cooking than beef broth. And now that I had started making all sorts of delicious chicken dishes for Oranjehoen, I was left with chicken carcasses. What better way to use up leftover chicken bones and chicken carcass than to make this delicious chicken bone broth.. Using the whole chicken is also the best value for money. If you want to make homemade bone broth make sure you’re using organic chicken bones.
Look at the colour
If you always use chicken stock from a cube, you will be amazed at the taste of this homemade chicken bone broth. The funny thing is that I hadn’t even added any salt to it, but the taste was so intense and so delicious! To make the slow cooker chicken stock, I put the carcass of 1 chicken (including the meat that sticks to it) in the bowl of the slow cooker.
I added celery, onion, garlic and spices and left the slow cooker on low for 20 hours. This worked for me, but even after 12 hours the chicken stock is really good. The longer you leave it, the more collagen comes out of the bones. So you are essentially making your own organic chicken bone broth. And once you’ve made this gorgeous chicken stock you can make this old fashioned chicken soup too.
Storing
You can freeze chicken stock in portions. This way you can add it to your food whenever you like, in portions. You can also freeze it in ice cubes, but you’ll need a lot of cubes for a soup, for example. I find this less convenient, so I freeze it in half liter.
When the time is up, strain the broth and let it cool in the freezer containers. Freeze it and you will always have a supply. This recipe makes just under three litres of stock.
In a normal pan
If you don’t have a slow cooker, you can make chicken stock in a normal large pot.
Put the same ingredients in a saucepan. Simmer on a low heat for at least two hours. Check occasionally to make sure there is still enough liquid. When cooked, turn off the heat, leave to cool and refrigerate for about 24 hours. Then strain and treat as normal. Keep in mind that in order to make bone broth you will need a longer time. In the pan this will become a regular chicken stock.
I suspect the flavor will be much less intense this way, but it is definitely a good option!

Chicken bone broth
Ingredients
- 1 chicken carcass
- 3 liters of water
- 2 onions in pieces
- 2 bulbs of garlic in pieces
- 2 bay leaves
- 1 stalk of celery in pieces
- 30 ml apple cider vinegar
- salt and pepper

- Slow cooker or instant pot
How to make chicken bone broth
- Put the chicken carcass in the slow-cooker. Add all the remaining ingredients and turn on low.
- After 12 hours you can basically use the broth but the longer you let it steep the more the collagen comes out of the bones. The apple cider also helps with this.
- After 20 hours you strain the liquid. You can now let it cool and freeze it until you need it. In refrigeration, you will notice that the broth thickens. This is normal. When you heat it, it will become liquid again. It's the gelatin that thickens it.
