Smoked mackerel salad with beetroot and apple

This salad will feed four when used as a side dish or two if it is for lunch and eaten with some toasted bread

Using canned fish is such a great way to get more fish on the table and this delicious mackerel salad with beetroot is a must try if you love mackerel!

If there is one downside when it comes to smoked mackerel (or any mackerel really) is the fact that they have so many bones inside. And I hate fish bones in my food. So that is the only reason I tend to skip mackerel. Yes of course you can buy mackerel fillets but as you probably know if you’ve tried it, they can still contain fish bones. But I’ve had good results with mackerel from a can so that is what you can use if you want to. I did actually go for the fresh ones this time and no bones!

I love pairing the fatty mackerel with earthy beetroot and fresh and sour apple. It’s the perfect combination!

Other than those ingredients you need just a bit of mayonnaise, yogurt, horseradish sauce and you’re good to go. It cannot get much easier than this mackerel salad. I will give you a couple of variations below. If you don’t want to use the mayonnaise you can also go for an olive oil based dressing, but I would suggestion using the mayonnaise is by far the preferred option. Add a bit of lemon juice if you want to fresh it up a bit.

Making the mackerel salad

Using your hands to take apart the mackerel make sure to double check for the fish bones in there. I don’t like too large pieces so I will take it apart to quite small pieces. Other than that it’s basically chopping the beetroot and the apple and adding the salad dressing to the beetroot salad. Done. O let’s not forget the dill to add on top of the salad. It’s a pretty tasty recipe and super simple to make.

Variations

Now as I said this is the simplest of simple salads, but you can totally make it more complicated if you want. For that you could consider adding some new potatoes to the salad to make it more filling. Chilli flakes for heat and spring onions for crunch. You can also add some salad leaves if you want to serve this on a large platter. Perfect for an outdoor barbecue.

Due to the oily fish the salad is already filled with healthy fatty acids, but you could consider adding some avocado as well. A few hard-boiled eggs are also a great addition. If you love beetroot, also try out this beetroot salad with chives and egg.

Mackerel salad with beetroot

Ingredients

  • 250 g mackerel fillets
  • 1/2 bunch dill
  • 2 tbsp mayonnaise
  • 1 tbsp yoghurt
  • 1 tsp horseradish or more if you like
  • 1 apple cut in cubes
  • 2 beetroot cooked

How to make the mackerel salad

  1. Mash the mackerel in a bowl with the mayonnaise, yoghurt and horseradish.
  2. Wash the apple and cut into small cubes with the skin on. Also dice the beetroot.
  3. Finely chop the dill.
  4. Stir the apple, beetroot and dill into the mackerel and season with salt and pepper.
  5. Delicious with good bread.
