One of my all time favorite snacks are homemade onion rings. They’re the perfect side dish or delicious snack for any festive occasion. I serve them with Thanksgiving, New Years, Christmas and birthdays!
Crispy onion rings recipe
Making coated onion rings is not complicated but there are a few things to keep in mind.
- The size of your onions. While technically you can use any kind of onion you like; red onions, yellow onions, sweet onions or white onions. But… don’t go for small onions. You can if you like peeling and cutting onions, but the easiest is to make these beer batter onions rings with big onions!
- The temperature of your oil. When you’re using a deep fryer for making these delicious onion rings make sure the oil temperature is at 350˚F/180˚C before you add the onions in! Otherwise they will get soggy and not so good.
What you need to make the best onion rings
- Onions – as mentioned, any type will do, but big onions make for a lighter job
- All purpose flour
- beer – just a little under one cup or 200 ml
- onion powder – more onion? Yes!
- garlic powder
- paprika powder – I like using smoked paprika here
How to cut onion rings
Cutting onion rings is not difficult. You first remove the top and bottom of the onion and remove the outer skin. Then slice the onion in slices of around 0,5 centimeter (or quarter inch slices) thick. Below is an easy video where Martha Stewart shows you how to cut the onion rings.
Make sure to separate all the rings once you’ve cut them. So you will have a pile of onion rings. If you happen to have a mandolin, that would make slicing even easier, but I use a sharp knife and that works perfectly fine too.
How to make batter for onion rings
Of course when it comes to the batter and flour mixture you’re using for the onion slices there are many different options. I went with a delicious beer batter. Due to the bubbles in the beer the onion ring recipe becomes even lighter and more delicious but you can also use sparkling water instead. If you do maybe add some more seasoning to the flour as beer does give a lot of taste as well.
For the rest making the batter for the onion rings is as easy as mixing the ingredients in a medium bowl with a whisk to a smooth consistency and then dipping the onion rings in. I like to season the flour mixture with garlic, onion and paprika powder. A bit of salt and pepper is also a good choice And adding some chili powder or cayenne pepper will give it a slight kick.
How to dip the onion rings in the batter
Make sure the hot oil is ready to go before you dip your onions in the batter and that you have a large plate covered with paper towels ready as well. Now of course you can toss all the onions in the batter and scoop them out with your hands, but trust me; that will be very messy. It’s easier to use a long wooden skewer to take out the onion rings. You can let excess batter drip from the onions and then carefully place them in the hot oil.
There are a couple of ways how to do this. You can use a large skillet and add an inch of oil in the pan. You can shallow fry them that way. Or you can be deep frying and add more onion rings in one go. Don’t overcrowd the pan, whichever method you choose. Take them out of the oil with a slotted spoon.
Once fried arrange them in a single layer on the paper towel-lined plate to drain excess oil and crisp up.
What dip to serve with onion rings?
Now you can basically serve the onion rings with your favorite dipping sauce. There is no right or wrong here. I like to use the same mixture I use for french fries but here I went with a simple mixture of mayonnaise and sweet chili sauce. Super delicious and super easy. But a simple dip of ketchup, hot sauce or barbecue sauce is also delicious.

How to make onion rings
- Preheat the fryer to 180˚/350˚F. If you don't have a frying pan, you can use a saucepan, just make sure you don't put too much in at once.
- Take a large bowl and pour the batter into it. Mix the flour, beer, herbs and Parmesan together. Whisk for a while and add salt and pepper to taste.
- Clean the onions and cut them into thick rings. Not too thick but not too small. About half a centimeter per ring. Use a sharp knife or a good mandolin with adjustable blades
- Using a wooden skewer, slide one onion ring at a time through the batter and carefully place it into the hot oil.
- Fry the onion ring for 2-3 minutes or until golden brown. Turn halfway through.
- Place the fried onion rings on a piece of paper towel and repeat the process with all the onion rings. Depending on the size of your fryer, you can of course fry more than one at a time. Just make sure they don't stick together.
- Make the dipping sauce by mixing the ingredients together. Serve with the hot onion rings.
