Easy and delicious green smoothie with coconut water, spinach, mango, pineapple and Greek yogurt. Great way to start the day with a healthy breakfast!
Green smoothie with coconut water
Not too long ago, I had never tried a green smoothie. It didn’t help that I did not own a high speed blender so I kept having bits of green stuck between my teeth when I tried to make a smoothie. So yes, a high speed blender helps (although not a absolute necessity).
For this green smoothie I went with coconut water. I love coconut water. It’s a great thirst quencher for one and is also filled with nutrients. I added Greek yogurt (can be replaced with coconut milk), pineapple, mango and spinach.
Don’t let it stand!
Now a good thing to know is that the enzymes in pineapple react with the Greek yogurt. So if you leave it standing for too long it will turn bitter. The first time I got that reaction I was puzzled, so I looked it up and that was the reason. So make it and drink it right away.
Since I had a jar of maca, I decided to add a tablespoon of this as well. Not a must of course. It is one of those superfoods. It comes originally from Peru and does have an enormous nutritional value. It has loads of minerals (magnesium, calcium, silica etc), vitamins and amino acids. So pretty high nutritional value.
In general I’m not a big fan of the word ‘superfood’ so you can forget it or take it for granted.
Best blending
In order for the smoothest result add the liquids into the blender first. Add the spinach and blend until as fine as possible. Then add the pineapple, mango and anything you want and blend again. Pour into a glass and drink right away.
why does yogurt turn bitter when mixed with pineapple?
Why does my green smoothie have little bits of spinach?
Green smoothie with coconut water
Ingredients
- 150 gr spinach
- 150 ml greek yoghurt
- 150 ml coconut water
- 100 gr pineapple chunks
- 100 gr mango chunk
- 1 lime juice
- 1 tbsp maca powder
How to make the green smoothie
- When filling your blender it is easiest if you add the liquid with the maca first and then put the spinach on top. Turn the machine on and the spinach will be ‘eaten’ by the machine.
- As soon as the spinach is blended add the pineapple chunks, the lime juice and the mango and blend until smooth. Enjoy straight away
