This tasty and simple dish of green cabbage with caramelized onions and bacon is easy to make and delicious with sweet or plain mashed potatoes.
Green cabbage recipe
Green cabbage is one of the vegetables that I eat too little off. I only found two recipes for it on the site (and non on the English site!) One of the reasons is probably that it is not so easy to find in the grocery stores. At least not here in the Netherlands. I don’t know why to be honest. To difficult? Not enough people who want to give it a go?
Whenever I feel like making a green cabbage recipe I have to order it online. But if you cannot find green cabbage this dish is also quite good with kale or lacinato kale.
What you need for this recipe
- head of cabbage – you can use savoy cabbage, green cabbage, napa cabbage or
- yellow onion – you need about two large ones. You can use shallots but since I don’t particularly like chopping onions I tend to go with the regular large ones.
- bacon
- raisins – you can also use dried cranberries
For serving this cabbage side dish it is quite good with pork chops, or roast chicken. I also like serving it with roasted Jerusalem artichokes or roasted potatoes. It is a sautéed cabbage recipe so it is also pretty quick.
Making the sautéed green cabbage
Now making this cabbage recipe is quite simple. You start by cleaning the cabbage. Remove the outer leaves, cut the cabbage in four quarters and than in small strips. One whole cabbage is usually quite a lot of cabbage so you can see how much you need. For two people I generally find that half a cabbage is sufficient as a side dish.
Next step is to caramelize the onions which does take a bit of time. So I do use two pans to speed the process up. I caramelize the onions on one smaller pan and use a large skillet for sautéeing the cabbage and the bacon. I start by adding the bacon so the bacon fat gets rendered out. I don’t use any other oil in the pan so it’s just the bacon fat. You can also use melted butter but whatever works for you.
Once the bacon is crisp I add the cabbage. Cooking cabbage can take a little bit of time as the vegetable itself is quite tough, so needs a little more time. In the meantime check your onions and once they are soft, golden brown and melty you add some balsamic vinegar to finish them.
Once the cabbage is wilted your dish is finished. Season with sea salt and black pepper and if you like things a little spicy add some red pepper flakes too. Serve the cabbage with the caramelized onions on top.
Green cabbage recipe
Ingredients
- 1/2 green cabbage
- 100 g bacon rashers
- 2 large onions cut into rings
- 1 tbsp coconut oil
- 1 tbsp balsamic vinegar
- 2 tbsp raisins
- Pepper and salt
How to make the green cabbage recipe
- Cut the kale into four pieces and remove the hard core. Cut the rest into strips.
- Heat the coconut oil in a frying pan and slowly fry the onion rings until they are soft and glazed. Add the balsamic vinegar and fry a little more.
- Heat some coconut oil in another frying pan and fry the bacon until brown and crispy. Add the kale strips and cook until soft and wilted. Sprinkle with the sultanas.
- Serve the kale with the onion. Delicious with boiled sweet potatoes, roasted potatoes or roasted jerusalem artichokes
