Super easy and delicious gazpacho recipe. Takes just a few minutes to make

This delicious and easy gazpacho recipe is done in a few minutes, although even better if you cool it afterwards. It’s the perfect chilled soup for a hot summer day.

Not sure how the weather is at the moment in your area but over here it’s been mostly a lot of rain. Too much rain, but I did hear a lot of people complain so I guess it is a world wide issue. But let’s hope summer will eventually come around and when it does, I do have the perfect soup for you. This easy gazpacho recipe literally takes just a few minutes to make and can easily be adjusted to what you like. You do need either a high speed blender or a food processor to make this. Or an immersion blender. That’ll do the trick nicely as well.

What goes into the gazpacho

Now for this easy gazpacho soup recipe I used a lot of ready made items, like the canned tomatoes and the roasted red pepper. Of course you can use fresh ingredients if you prefer, but the canned tomatoes work great here. I’ll give a couple of variations to the recipe later on, but the basis of this cold soup is just the tomatoes and the peppers.

You place those together with the diced cucumber in the food processor and blend it till a smooth mixture. Season the cold summer soup with some smoked paprika, pepper and salt and finish it with some fresh herbs. I like to use fresh coriander, but if you’re not a fan you can easily replace this with fresh basil or parsley.

Now gazpacho is a classic cold Spanish soup and there are many variations that you could try out. I like to add a bit of red wine vinegar to the mix and serve it with a drizzle of olive oil and some chopped fresh herbs. One of the key elements of this soup is that it needs to be cold. So don’t forget to chill the soup in the fridge before serving. I simply place it either in a large bowl or in an airtight container and chill it for a couple of hours before serving. Once cold I serve it with some fresh veggies on top. Think about some sliced cucumber or some ripe tomatoes.

Variations

Now this delicious gazpacho doesn’t need much else to be perfect but you can vary it by adding some red onion or I also like to top it off with some small shrimps. It’s also delicious to turn this into a watermelon gazpacho by simply blending some watermelon through it. Make sure to taste and add some lemon juice if needed. Sometimes watermelon needs a bit of freshness. You can serve the gazpacho in bowls or in shot glasses. Perfect for hot summer months!

For a little kick you can add some chili peppers to it as well.

  • 400 gr canned tomatoes
  • 2 roasted peppers
  • ½ cucumber diced, plus extra to serve
  • 1 tbsp red wine vinegar
  • ½ tsp smoked paprika ground
  • pepper and salt
  • 1/2 bunch fresh coriander
  • 2 tomatoes chopped

How to make this easy gazpacho recipe

  1. Put all ingredients, except the extra diced cucumber and tomatoes, in a blender and spin until smooth. Add salt and pepper to taste. Place the soup in the fridge until ready to use and serve ice cold.
  2. Delicious with some extra tomatoes, cucumber and fresh coriander on top.
