French toast is one of my favorite dessert/breakfast dishes. It’s perfect if you want to use up leftover old bread and you can make separate french toasts or make it in a casserole. Technically you could also call this a bread pudding I suppose but this French toast with lemon curd is one of my favorite easy dishes!
French toast with lemon curd
I’m feeling slightly stuffed sitting behind my desk right now typing these words… Stuffed because I have eaten too much and I should be moving around, burning off some of the just consumed excess calories but instead I cannot move… I just have to tell you about the most delicious French toast I have ever, ever eaten… And it was just mere minutes ago… Mere minutes ago when I had this life changing experience… Well ok maybe it wasn’t that dramatic, but it was definitely really really good.
It’s time to start baking
So what happened on this regular Sunday that made it so spectacularly good..? Well, let me tell you… We woke up quite early today as Tom is playing his Dungeons and Dragons game today with his friends. That is always a good time for me to start baking something as I know it will be consumed by the guys. I made little pistachio cakes but since that only used the egg whites I was left with 5 egg yolks.
While you can definitely make this french toast with lemon curd with just regular whole eggs, using the egg yolks made it extra creamy I suppose. And adding some chopped pistachio and plenty of fresh strawberries made this so good!
Preparing the french toast with lemon curd
For making the french toast with lemon curd you can use any kind of bread you want. It’s a perfect way to use up leftover stale bread and in my case I went with brioche bread that I previously bought at the grocery store. I love making bread pudding too like this bread pudding with blue berries, but since it is summer and strawberry season I naturally had to use sweet strawberries. The lemon curd is also easy to make yourself but you can definitely use store-bought as well. Spread the lemon curd on the slices of brioche before stacking them into the oven dish.
I love letting the tops of the bread stick out so they get extra crunchy. Once you’ve made the cream mixture with the eggs, pour it over the dish and let it stand for about 10 minutes so the cream can soak into the french toast. Than place in the oven and let it bake for about 20 minutes covered. Remove the foil and bake for another 10 minutes.
Serve with cream or ice cream
You can absolutely serve the french toast with lemon curd as it is. But if you want to make it even more indulgent you can add ice cream of whipped cream.

French toast with lemon curd and strawberries
Ingredients
- 3 slices brioche bread
- 4 egg yolks
- 100 gr fresh strawberries
- 4 tbsp lemon curd
- 100 ml heavy cream
- 100 ml milk
- 1-2 tbsp sugar depending on how sweet you want it to be
- handful of pistachio

- Oven dish 20 x 30 cm
Titel
- Preheat your oven to 180˚C/350˚F
- Take your slices of brioche bread and spread them generously with lemon curd. Cut the slices diagonally in two and place them (long side down) in an oven dish. Don't put the slices too close together as you want some of the fruit to be put in between the slices.
- Clean your strawberries, slices them into quarters and spread them over the brioche bread. You can use different kinds of fruits. I initially wanted to use rhubarb but no rhubarb yet.. If you do use rhubarb, maybe put a little more sugar in the egg-cream mixture.
- Put the milk, cream, egg yolks and sugar together and whisk to combine. If you do not have egg yolks leftover you can also use two whole eggs instead. Pour the cream mixture over the brioche and sprinkle with the chopped pistachio. Let it stand for about 10 minutes so the cream can soak into the brioche a bit.
- Cover the ovendish with aluminiumfoil and put in the oven for about 20 minutes. Remove the foil and put back in the oven for a further 15 minutes or until the brioche is nicely browned. Enjoy!
Notes
- You can make this French toast casserole using any kind of leftover stale bread you like. I went with brioche as that makes the dish extra sweet.
- If using regular bread you might want to add a bit more of the lemon curd for extra sweetness
- Eat the french toast with lemon curd right away. It’s best served luke warm
- You can store it for 1-2 days in the fridge after making. But it won’t be so crispy anymore.
- Strawberries can be replaced for any kind of other (soft) fruit you like
