The first time I attempted to make a vegan dessert with agar agar I failed miserably…. Instead of a firm pannacotta I ended up with a panna cotta puddle. Still tasted good but not exactly what I was going for. So I had to try again. To play it safe I decided to put the panna cotta in a jar and not in the normal moulds so in case of disaster it would still look ok. I shouldn’t have worried about that as the result was even a little too firm. So I still have to get the ratio of agar agar right. But I’ll get there in the end I’m sure.

Make it hot

You can actually see how firm it is if you look at the spoon contents in the picture above. When I use too much gelatin I hate the mouth feel. It becomes rubbery and disgusting. With agar agar that doesn’t happen quite the same way. Gelatin tends to melt in your mouth as it does melt at lower temperatures. Since agar agar needs a higher temperature it’s a bit more crumbly.

Another thing to keep in mind is that agar agar is much firmer in general but one thing to remember is that in order for it to set it first needs to be hot enough. That’s where I went wrong the first time. I used it the same way as I use the gelatin and that is not boiling the mixture. Also replacing gelatin with agar agar in a 1:1 ratio is not going to work. You can find more information in this post. The recommendation here is to use 0.75% of the total weight of your recipe. Which would mean in the recipe below you would use roughly 4-5 gram of agar agar.

I’ve opted for less than that, but to be on the safe side make it in a glass like I did. That’s for sure the best way if you’re still testing the agar agar levels.

Flavour is top!

In terms of flavor this is really good. I will definitely be making this again but will try a little less agar agar next time. It’s powerful stuff!

Delicious vegan pannacotta with agar agar

Ingredients

  • 500 ml coconut milk 2 cups. from a can
  • 3 gr agar agar powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground fennel seeds
  • 3 tbsp maple syrup
  • 3-4 passion fruits

how to make vegan pannacotta

  1. First mix the agar agar with 1 or 2 tbsp of the coconut milk and stir until it is smooth. Place the coconut milk with the agar agar in a small saucepan. Add the spices, the rest of the coconut milk and the maple syrup and bring to the boil.
  2. Leave to boil for about a minute and than pour into your preferred moulds.
  3. Leave to set in the fridge for about 3 hours
  4. Scoop the seeds out of the passion fruits and distribute over the pannacotta. Serve right away.

    just tried, it’s super yummy, i add a little bit tapioca flour to make it more stable, thank you for sharing this amazing recipe!
    btw my passion fruit is super sour,maybewill try passion fruit jam next time
