Delicious and super simple paleo Thai basil chicken

Quick and easy dish with fragrant chicken, lots of basil and zucchini 'pasta'

Over weight

It’s a huge issue in a lot of countries: weight. And more specifically; people that are overweight. Being too heavy unfortunately comes with many MANY disadvantages for your health and that is putting it mildly. More and more diseases are attributed to an excess in kilo’s (or pounds) For most of my younger years I was tall and slim. But as soon as puberty hit that quickly changed. For the last 20 years I’ve been weighing around 220 pounds (100 kg). Sometimes a bit more with the heaviest being 231 pounds or 105 kg. I’m tall (1.80 or 6 feet) so it divides fairly well but at the end of the day I was very heavy. Tall or not tall.

So you can say that weight has been an issue for most of my life. I kept losing the same kilo’s over and over again, never really dropping below that 90 kg mark. Until recently. After my accident (december 2015. You can read about it here) my weight skyrocketed with being immobile and feeling sorry for myself. Half a year later I decided to hire a personal trainer and while it still took me more than two years to get where I am today, I’m happy to report that at this very moment I am the lowest in weight since 20 years. I think that is rather cool.

I know weight is not all important and that it is just a number but it feels good. I feel better than I have in years and I’m pretty sure it has something to do with the fact that I changed my eating pattern. Before when I went on a diet, I would just stop eating chips, cookies and the like but would still eat loads of carbs, processed foods and convenience things. It didn’t make the cravings go away and it didn’t make me feel any better.

Real food

The secret for me? Eating real food. Not too much bread, not too much carbs and definitely no sugar. It’s still hard at times. I’m by no means perfect and it has been a constant up and down over the last couple of years but I’m getting there. It’s all downhill from here. Downhill in the good sense of the word. I’m at 194 pounds right now. Still approximately 10 kilo or 22 pounds to go before I’m fully satisfied. I don’t want to be super skinny. And I know that 78 kilo is perfectly fine for me.

That was a pretty long story to get to this delicious Thai basil chicken dish. I love Asian flavors and this is a great replacement for a traditional noodle dish. It has lots of veggies and just as much taste as the original!

Paleo Thai basil chicken

Marinade 6 hours

Ingredients

Marinade

  • 2 tbsp sesame oil
  • 4 tbsp coconut aminos
  • 2 tsp fish sauce
  • 1/2 tsp chili flakes
  • 1/2 tsp ground ginger
  • fresh black pepper
  • 4 cloves of garlic

The rest

  • 500 gr chicken fillet
  • 1 tbsp coconut oil
  • 1 red bell pepper thinly sliced
  • 45 gr fresh basil chopped
  • spring onions for serving
  • courgette noodles for serving
  • sesame seeds

Instructions

  1. Start by making the marinade. Simply combine all the ingredients and add the chicken slices to it. Leave to stand in the fridge for 6 hours.
  2. Heat the oil in the wok and add the chicken. Bake until the chicken is brown.
  3. Add the bell pepper and the basil and cook until the chicken is cooked through.
  4. Serve with courgette noodles, the spring onions and sesame seeds

  1. Losing weight is really hard. Eating real food does work, although it takes time. Sugar is one of my downfalls, too. 🙁 Anyway, this looks like a wonderful dish! Lotta flavor and filling — perfect.
