Sweet potato soup with chicken

If you love soup, this is an absolute winner. Creamy and sweet due to the sweet potato. Delicious with pulled chicken

Tasty, filling, easy to make and so delicious! This sweet potato soup with chicken has it all. You can choose if you want your chicken baked or cooked as I did here. Both will work well with this delicious soup.

The first time I made this soup was all the way back in 2013. We were doing our first whole30 at the time and I wanted something tasty and delicious. I felt it was time for a do-over of the soup, so I changed the recipe a little bit, added carrots and ginger to spice things up. It’s a super easy soup and will be suitable both for summer (you know those days when the weather is less than great? You’re gonna want a bowl of this sweet deliciousness!) and for winter. The ingredients of the sweet potato soup with chicken are pretty much available all year round, so no reason to not add it to your cooking repertoire.

What you need for the sweet potato soup with chicken

The key components of this soup are – obviously – sweet potato, carrots, chicken and coconut milk. I made it with chicken stock (perfect for slow cooker bone broth!) but you can use vegetable stock as well. Whatever you have on hand.

As with many soups you start by sauteing the onions and the garlic, followed by the vegetables. I love adding a good full tablespoon of curry powder. I use curry madras without any additives to it. That just makes the soup more special and extra fragrant. I cook a cinnamon stick with it, but that’s optional. You can also sprinkle some ground cinnamon in the soup if you want.

Easy soup recipe

Yes you do need a couple of ingredients for this sweet potato soup with chicken, but most of the ingredients are pretty standard and will be available in your pantry anyway. So it really is a super easy soup recipe. I puree the soup with a stick blender and add the chicken after that. A little splash of coconut milk and some fresh parsley finish off the soup.

How long can you keep the sweet potato soup with chicken in the fridge?

You can keep the soup in the fridge probably for around 2-3 days but it also freezes really well. I tend to freeze the pulled chicken separate from the soup. But that’s my personal preference.

Is the soup suitable for low carb diet?

You can eat it on a low carb diet but it does contain more carbs than most soups due to the sweet potatoes and the carrots. So if you’re really strict skip this soup.

I find the soup rather sweet, can I change that?

Well yes and no. The soup is indeed fairly sweet, comparable to – for instance – pumpkin soup, but if you want it a bit more savory you can add a splash of lemon juice or add more savory ingredients, like crunchy bacon bits, baked mushrooms or something similar. But at the end of the day, if you do not like sweet soup you might want to have a look at any of the other soup recipes.

Sweet potato soup with chicken

Ingredients

  • 300 gram chicken fillet
  • 1 liter chicken stock
  • 2 tbsp coconut oil
  • 1 onion sliced
  • 2 cloves garlic sliced
  • 2 tsp ginger freshly grated
  • 1 tbsp curry powder
  • 350 gr sweet potatoes cut into cubes (I used the orange ones)
  • 450 gr carrots cleaned and sliced
  • 1 cinnamon stick
  • 250 ml full fat coconut milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper

How to make the sweet potato soup

  1. Start by cooking the chicken in the chicken stock. Depending on the size of the fillet this should be around 10 minutes. Take out of the stock (don't discard!) and pull apart with two forks.
  2. Heat the coconut oil in a big pan and first sauté the onion until translucent. Add the garlic, ginger, curry powder and cinnamon stick and briefly sauté before you add the sweet potato and carrot cubes. Add the chicken stock and bring to the boil.
  3. Let it simmer for about 20 minutes or so or until the sweet potato and the carrots are cooked and soft. Add the coconut milk.
  4. Puree with a stick blender. If it is too thick at this point you can add some more water/coconut milk or stock. Taste and season with salt and pepper
  5. Serve the soup with the chicken and the fresh parsley.

    I think you worry too much about the blog thing. It will all sort itself out.

    Maybe I should check out Whole30.  🙂
