Ah sticky tofu! If you’re not a big fan of tofu (and truth be told, I am not) you will love this sticky tofu recipe. Combined with the egg fried rice, it’s a delicious veggie dish and tofu is a great source of plant-based protein.
Sticky tofu
Now the first step you want to take when making this sticky tofu recipe is to extract as much excess water from the tofu as you can. You can extra firm tofu and you do not want a watery mess. In order to do this you place the tofu on layers of paper towels and place a heavy pan on top. You do have official tofu press things that do the same thing, but if you’re not planning on eating tofu every week you might as well use the homestyle version. Leave this to stand for around 10 minutes.
You will have extracted a lot of water from the tofu. Now cut the tofu into cubes of roughly 1 by 1 centimeter. Add the corn starch and mix it through. The texture of the tofu will change after pressing it. The thing I personally dislike about tofu is the texture without pressing. Making it firmer gets rid of that issue.
Place a large skillet (non-stick pan is ideal) on medium-high heat and add vegetable oil. Fry the tofu pieces until you have crispy tofu and the end result is golden brown. Drain on paper towels.
Making the sticky sauce
Now of course it’s time to make the sticky sauce. For this you mix ginger syrup, regular soy sauce, sweet chili sauce, cornstarch and rice vinegar together. If you don’t have ginger syrup you can use fresh ginger (grated) combined with a bit of maple syrup. The corn starch is used to thicken the sauce slightly. You can simply make this in a small saucepan and add the tofu to the sauce. Check the recipe card for full instructions on how to make this delicious sauce. If you do not want to use soy sauce you can replace this for coconut aminos. Adding a bit of tomato paste and some brown sugar will also be delicious. Make sure to taste the sauce before using!
Egg fried rice
For making the egg fried rice you cook the rice according to package instructions, drain and set aside. Of course if you want to keep this recipe vegan than omit the eggs, but if not the eggs do make a delicious addition to the fried rice. The fried rice is pretty simple with some green onions, cilantro and fried with soy sauce. Now adding some sesame seeds is delicious as well as a splash of sesame oil.
If you want to add extra vegetables to the recipe consider adding some bok choy. That would work really well here. It’s a pretty easy recipe and perfect for a weeknight meal.
Sticky tofu recipe with egg fried rice
Ingredients
- 1 block tofu
Marinade
- 2 tbsp cornflour
- 150 ml sunflower oil
- 4 tbsp ginger syrup
- 6 tbsp soy sauce
- 3 tbsp chilli sauce
- 1 tablespoon rice vinegar
- 1/2 tbsp cornstarch
Fried rice
- 200 g rice
- 2 eggs
- 3 spring onions
- 3 tbsp soy sauce
- 1 bunch coriander
- 1 red pepper sliced
How to make the sticky tofu
- Try to extract as much moisture from the tofu as possible by wrapping it in three sheets of kitchen paper and placing a heavy pan on top. Leave to rest for 10 minutes. If all goes well, you will have extracted a lot of water from the tofu.
- Cut the tofu into 1cm x 1cm cubes. Put them in a bowl and spoon in the cornflour. Heat the sunflower oil and fry the tofu until golden brown. Drain the tofu on kitchen paper.
- Meanwhile, make the sticky sauce. Combine the syrup, soy, chili sauce and rice vinegar in a saucepan and bring to the boil. To thicken the sauce slightly, add half a tablespoon of cornflour and stir well. Add the tofu to the sauce.
- Cook the rice according to the packet instructions and drain.
- Finely chop the coriander, red pepper and spring onion. Add a tablespoon of sunflower oil to the frying pan, break the two eggs into it, stir well and add the rice and soy. Stir in the coriander, spring onion and pepper. Serve with the tofu. Delicious with more fried onions.
