Who doesn’t love a bowl of sticky chicken? This sticky lime and ginger chicken is the perfect balance between sweet and savory and pretty quick too!

Sticky lime and ginger chicken

This super delicious and easy weeknight dinner is from the book Modern Classics by Donna Hay. I love all things Donna. Well, ok that is not maybe entirely true but she does have a very, very high percentage of recipes that I just want to make as soon as I see them.

This sticky lime and ginger chicken is a perfect example of one such recipe. And I love how easy it is. Keep in mind that you do need to add rice, cauliflower rice and something green to the recipe if you’re making it. The recipe only covers the lime and ginger chicken itself. I added broccoli to the recipe which I just briefly cooked. It would do really well with cauliflower as well. Or add something like baked potatoes to it.

Super easy

For making this recipe you start by mixing the ingredients for the marinade/sauce together and slicing the chicken. I have used thigh fillets as I like them better than chicken breast but you could use either of the two. Whatever you prefer.

The original recipe by Donna called for almost a kilo of chicken but I thought that was a bit much for 4 people. But go wild if you think you want to eat a whole bunch of chicken.

Chicken recipes

I have a fond place in my heart for chicken recipes. And this one is right on top of the favorites. I like to serve it with rice and a large green salad. Or here with some broccoli. You can use either cauliflower rice (adding more vegetables at the same time) or regular rice. Whichever you prefer!

Sticky lime and ginger chicken

Ingredients

  • 80 ml honey
  • 2 tbsp oyster sauce
  • 1 tbsp lime juice
  • 5 cm fresh ginger grated
  • 2 cloves garlic minced
  • 60 ml water
  • 2 tbsp oil
  • 600 gr chicken thigh fillets cut and into strips
  • 1 lime in slices
  • 2 spring onions sliced
  • Broccoli or cauliflower for serving

Instructions

  1. Mix the honey, oyster sauce, the lime juice, the ginger, the garlic and the water in a bowl and set aside.
  2. Heat the oil on high in a large wok. Add the chicken and bake the chicken until golden or until cooked. Add the honey mixture and the slices of lime and bring to the boil. Cook for another 2-4 minutes or until the liquid is reduced.
  3. Serve on a plate and put the chicken on it. Sprinkle with chopped spring onions and serve with broccoli or cauliflower.
