Delicious and easy salad with goat cheese and blue berries

It’s no secret that I really love a good salad and in this case a salad with goat cheese, blueberries and macadamia nuts. For a hint of sweetness, a bit of crunch and a lot of flavor too!

Making the salad is super easy to do as with most salads and the hero of this dish is the fresh goat cheese. I love goat cheese and it works perfect here, but if you’re not a fan you can substitute it with feta cheese. To make the salad you take a large bowl and you add the lettuce to it. I’ve used a mixed spring mix lettuce but you can use your favorite salad leaves for this recipe. No matter what salad greens you prefer it will be good. I sometimes add a bit of baby spinach to it as well, but I kept it simple in this case.

I added a few handful of fresh organic blueberries to the mix.

Juicy berries

While you can add any kind of fresh berries to the salad, blueberries are also really good for you. I also add delicious macadamia nuts. I used the lightly salted ones as that goes together well in the simple salad. You can use unsalted if you prefer. And of course some creamy goat cheese. I’ve made this salad a couple of times and I like it with aged goat cheese probably the most. Not hard goat cheese, you still want that creamy effect, but some what aged.

Salad dressing

For the salad dressing I made a quick honey mustard dressing. Using extra virgin olive oil which I mixed with mustard, vinegar and a little bit of honey. Instead of the vinegar you can also use some lemon juice. You mix it together in a small bowl and drizzle over the salad. I finish the dish with fresh herbs and that’s pretty much all there is to it. Variations and alterations

If you’re not a fan of goat cheese you can substitute for feta as mentioned, but you can also use blue cheese. You can replace the macadamia with pine nuts or chopped hazelnuts as well. Sunflower seeds would also be good to use. 

You could also change this into a warm goat cheese salad. In that case you take a log of goat cheese and you cut slices out of it. You can place them under the gril in the oven and let them get golden brown before adding to the salad. That will make the goat cheese a bit melty and delicious. Sprinkle the goat cheese directly with some honey on top for even more deliciousness. Or try and make the goat cheese in the air fryer. Haven’t tried that myself but that would be highly convenient I think.

You can also add some dried cranberries to the baked goat cheese salad.

A salad with goat cheese and walnuts is more or less a classic combination. And you can definitely replace the macadamia for walnuts if you want. I just like the macadamia more. 

Lunch

The salad with goat cheese is perfect as a quick lunch or as a side dish. It’s not filling enough to serve as a main meal unless you want to keep it very light but in general this is more of a lunch.

What dressing goes well with a goat cheese salad?

I would say for me that honey mustard dressing is perfect for combining with the goat cheese salad, but you could also go for a balsamic vinaigrette or another balsamic dressing.

Ingredients

  • 100 g mixed lettuce
  • 100 gram blue berries
  • 50 gram soft goat cheese
  • 4 tbsp macadamia nuts lightly roasted or you can use hazelnuts as well

For the dressing:

  • 1 tbsp of coarse mustard
  • 1 tsp honey
  • 2 tbsp of white wine vinegar
  • 50 ml good olive oil

How to make the salad with goat cheese

  1. Roast the macadamia nuts lightly and chop into smaller pieces.
  2. Make the dressing by mixing the ingredients well. Add the other ingredients together and shake to mix before sprinkling with the dressing.
  3. Eat right away!
