Salad with grilled courgette and feta

Super easy and delicious salad recipe which works well for lunch and dinner.

In this salad with grilled courgette and feta, you’ll find loads of delicious vegetables and it’s a perfect easy light dinner. I either eat this for dinner or for lunch.

Originally this salad with grilled courgette was made for something called the Foodblog swap. It used to be something we did here in the Netherlands. We picked a recipe of a blog we got assigned and made the recipe linking back to the original blogpost.

It was a fun project and I’ve made some delicious recipes as a result of it. But a lot of the blogs at the time don’t exist anymore so it was time to give the post a small make-over.

Now this salad is super easy to make, the only thing that does take a bit of time is the grilling of the courgette. I love courgette (or zucchini, depending on where you live) and it’s such a versatile ingredient. In this case you cut the courgette in thin ribbons length wise. You can slice it in any other way you like, but make sure not to make the slices too thick.

You want them thin so the grilling part is done in no time at all. If you do not have a grill pan, you can easily do the same in a regular skillet. I like the grill marks on the courgette and it does give a slightly different flavor. But not enough to buy a pan if you don’t own one.

Quick salad with grilled courgette

If you’re a fan of courgette you will want to try this delicious salad too. I did make a couple of changes to the original recipe. The original called for 200 grams of feta which is a bit excessive for just two people. So I halved the amount. I also left out the red onions and I forgot to add the olives. If you’re a fan of raw onions (I’m not) you can add the sliced red onion in and add olives if you want.

I did add a bit of pumpkin seeds for added crunch as well. This can be replaced by sun flower seeds or some chopped roasted nuts. All in all, this salad with grilled courgette is easy and delicious!

Salad with grilled courgette and feta

Ingredients

  • 75 g lettuce of choice
  • 1 courgette
  • 125 gram cherrytomatoes
  • 100 gram feta
  • 1/3 cucumber

Dressing

  • 2 tbsp Extra virgin olive oil
  • 2 tsp mustard
  • 2 tsp honey
  • 1 tsp red wine vinegar
  • pepper
  • salt

How to make the salad with grilled courgette

  1. Cut the courgette in thin slices lenghtwise and heat a griddle on high. Brush the courgette slices with some olive oil and gril until they are cooked and have nice gril marks.
  2. Put on a plate and leave to cool.
  3. Cut the cherry tomatoes in quarters or halves, Wash the cucumber and cut in half and than in slices
  4. Make the dressing by combining, mustard, honey, olive oil and a bit of red wine vinegar to taste. Add salt and pepper
  5. Put the salad in a bowl and add the tomatoes, cucumber, feta and drizzle with some of the dressing
