Roasted zucchini salad with bacon and pine nuts

Super simple salad but perfect for a quick meal or add as a side to a barbecue!

This delicious and easy to make roasted zucchini salad is served with crispy bacon and toasted pine nuts. Roasting the zucchini does take a bit of time, but this is a delicious side dish or lunch recipe.

To be honest I never know if I should call the courgette a zucchini or not. Where I live (the Netherlands) we simply have courgette. End. As far as I know the difference is purely related to where you live. So if you’re in England I’d imagine it would be a zucchini (or a courgette… like I said, I never knew when it what)

To avoid confusion I think I’ll just stick to zucchini as I don’t really know where you all live anyway.

How that for a meaningless intro? 🙂 This salad however is by no means meaningless. It is delicious and due to the roasting/grilling of the vegetable it becomes a whole new flavor.

I love zucchini and I use it in all sorts of dishes. It’s easy to create a spaghetti from it, soup, cake, stirfry… the possibilities are endless. What is your favorite way to prepare zucchini? Or maybe you don’t really like this humble vegetable.

I think zucchini is definitely one of those vegetables that is used most often. And not only that it is also pretty healthy. There is lots of antioxidants in it, a fair amount of fiber and vitamine A and C.

When we eat the zucchini, we really are eating the unripe vegetable as the ripe ones contain massive amounts of seeds. Not very pleasant and if you’ve ever eaten one of those giant zucchini you probably know what I mean.

Roasted zucchini with bacon and pine nuts

Ingredients

  • 1 zucchini sliced
  • 50 gr pinenuts
  • 3-4 slices streaky bacon
  • parsley chopped
  • mint fresh, chopped
  • olive oil

Titel

  1. Brush the slices of zucchini with olive oil and bake them in a grillpan until cooked. In another pan bake the bacon until crispy and leave to drain on kitchen paper. Chop into smaller pieces.
  2. Roast the pine nuts
  3. Make the salad by assembling the zucchini slices on a place. Sprinkle with the pine nuts and the bacon and end with the fresh herbs.

  1. Zucchini where I live, but I know what you mean. 🙂 I love the combo of bacon and zucchini. I usually do it all in the frying pan, but I like your method — definitely will try that. And I’ve not added pine nuts to the mix — sounds terrific. Thanks!
