  • kohlrabi – I used 1 bulb per person, depending on the size of the bulb that should be enough as a side dish
  • garlic – I used roughly 2 cloves of garlic which ended up being 2 tsp of grated garlic. You can use fresh or you can use the freshly grated garlic from a jar like they sell in the grocery store (I sometimes love that for convenience!)
  • Parmesan – use as much Parmesan as you want. There can never be enough cheese in my book.

But this time, I wanted to try something new and see what happens when you roast it. The result? Tender, golden cubes of kohlrabi with a rich garlicky flavor, topped with melty Parmesan cheese.

How to Make Roasted Kohlrabi

  • Prep the kohlrabi – Peel the bulbs and dice them into small cubes. Don’t cut them too large; you want them to cook evenly in the oven.
  • Cook in garlic butter – Sauté the cubes in plenty of butter with minced garlic until lightly golden.
  • Roast with Parmesan – Sprinkle generously with Parmesan cheese and transfer the skillet to a 400°F (200°C) oven. Roast for about 20 minutes, depending on the size of your cubes, until tender and caramelized.

Ingredients

  • 1 kohlrabi
  • 50 g butter
  • 2 tsp garlic grated
  • 50 gr Parmesan cheese grated
  • 2 teaspoons fresh parsley chopped

Instructions

  1. Preheat the oven to 200˚C. (400˚F)
  2. Clean and slice the kohlrabi into cubes. Heat a frying pan with the butter and garlic and fry the kohlrabi for a few minutes.

  3. Remove from heat and sprinkle with grated Parmesan cheese.
