Plum and almond crumble slice

Delicious and not difficult to make, although baking in separate layers does require a bit of time

I love plums but you know what happens when you went to the farmers market and bought too many plums. They all get ripe at about the same time which means you either have to eat 10 plums a day or use it for something else.

So I started searching the internet for a delicious recipe with plums and I bumped upon a recipe from BBC Good Food for a plum and almond crumble slice. The name is a bit odd if you ask me but you can call it a pie or a tart I guess as well.

Making this plum and almond crumble is certainly not difficult but it is a bit time-consuming as you need to bake it in three separate layers. First you bake the bottom, then you add the softer layer with the plums and then you finish by adding the crumbles and almonds. So it does take a while for it all to be finished but it is definitely worth it!

I do wonder what would happen if you actually bake filling and topping at the same time. I’m thinking that might be no issue at all. The worst that could happen is that it browns a bit too much, but you could always cover it with a bit of aluminum foil if that happens. I think it should be fine and it saves an entire step.

The plum and almond crumble is delicious all on it’s own but it would be even better if you serve it with some sweetened whipped cream or vanilla ice cream (or both!)

Plum and almond crumble

Ingredients

  • 250 g butter this must be very cold
  • 225 g granulated sugar
  • 300 g ground almonds
  • 140 g all purpose flour plus 25g/1oz
  • 2 eggs
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 6 plums stoned and cut into sixths
  • 50 g flaked almonds

How to bake a plum and almond crumble

  1. Heat oven to 180˚C (350˚F). Take a baking tin of around 20 by 30 cm (8 by 12 inch) and line it with baking paper. Now add the (cold!) butter with sugar and almond flour to a food processor. Pulse until you have the texture of breadcrumbs. Take half of the mix out and set aside in a separate bowl.
  2. Now to the rest of the mix in the food processor you add an additional 140 grams of flour (5oz) and turn till it forms a dough.
    Add this to the prepared baking tin and press it firmly into the tin with the back of a spoon or with the back of a glass.
    Place into the oven and bake for 15-20 minutes until golden brown. Take out and let it cool for 10 minutes while you work on the filling.
  3. To finish making your filling you place the half of the mixture you took out earlier and put it back into the food processor. Add the rest of the butter and sugar and keep a few tablespoons of the crumble for the topping.
  4. Add the eggs one by one with 25 grams of flour, cinnamon and baking powder and turn to a soft batter. Spread this over the cooled base.
  5. Press the plums into the filling and sprinkle with a little granulated sugar and cinnamon. Bake for 20 minutes, take it out and then sprinkle with the remaining crumble mix and the flaked almonds. Bake for another 20 minutes or until golden brown.
  6. Let it cool in the tin before slicing. Serve with whipped cream or vanilla ice cream!

  1. 🙂 Almond, cinnamon and plum- what is there not to love! I am so partial to almond flour that I think I will love anything with it.
