Pasta with feta and chili

Easy and delicious quick weeknight pasta dish with feta and some red chili

Simple and tasty pasta with feta and chili. It can easily be pimped up with extra vegetables but it’s delicious as it is! Budget friendly too!

You probably did not pick out your boyfriend/girlfriend/husband or wife for their love or non-love of certain food items. Or did you? But really, sometimes I find it such a shame that Tom is not a cheese lover. Sure I can make him happy with an oven dish which has a crispy cheese layer on top or a pizza with regular cheese will be ok too. But don’t give him a quatro formaggio! Noo, that contains blue cheese and that is horrible (or so he thinks).

Now me on the other hand; I am a real cheese lover or “kaaskop” (cheese head) as they tend to call you when you’re Dutch. I love all cheese and the stronger the better.

Budget friendly

Now this pasta with feta dish came about when I was doing a budget challenge with a friend. We had decided that we could only make dishes that were no more than 5 euro each day. For the whole day mind you. Not only dinner!

As you can probably image that was quite a challenge but this pasta dish was a little more than € 2,- at the time. (we’re talking 2014!) I don’t think I’d be able to make this pasta with feta today in 2024. Not only has the price of feta quadruppled or so it feels but everything has become more expensive. And let’s be honest; while this pasta dish is super delicious all on it’s own, it does need a bit more in terms of vegetables.

Delicious with spinach

The pasta with feta could be even better if you add some spinach to it. Adding some sautéed zucchini would also be a great addition, but a nice simple green side salad is also delicious and perfectly easy to add.

I love the taste of real feta and not what they call ‘white cheese’. It’s just not the same. So if you can, look for authentic Greek feta. It makes a world of difference. Other than the feta this requires some red chili peppers. Taste if they are very hot and slice thinly. Sometimes peppers can vary a lot and can be quite mild or ridiculously hot. So testing it is key before you add it to the dish.

You can also replace the chili with some chili flakes if you want. A little sprinkle of olive oil will finish the dish. O and parmesan makes any pasta better!

Ingredients

  • 150 gr penne pasta
  • 1 lime (juice)
  • 2 tbsp pine nuts roasted
  • 1 tbsp fresh parsley
  • 1 tbsp olive oil
  • 1 red chili finely sliced
  • 50 gr feta cheese crumbled

How to cook the pasta with feta

  1. Cook the pasta according to packet instructions while you cut the vegetables and crumble the feta. Keep the feta aside.
  2. Once the pasta is cooked, drain and transfer to a large bowl. You can basically add the other ingredients in their raw state or if you prefer you can quickly fry the red chili briefly. Up to you. Sprinkle some olive oil and lime juice over the pasta, stir and taste. Add some pepper and salt as needed and enjoy!

  2. I’ve never met a cheese I didn’t like! Or pasta, for that matter. Almost never use feta with pasta for some reason (and when I do it tends to be in a pasta salad). Love this idea! And the little bit of spicy you’ve added is wonderful.

    I would be called a cheesehead too but not the maggotty sort. Ewwww. John loves blue cheese but he doesn’t like pasta. Who ever heard of anything so silly? I would really enjoy this dish – without him.

    • He doesn’t like pasta?? O now that’s just bad.. I’m not sure what I would prefer; non cheese loving or non pasta loving… Hard choice! But yes enjoying it without him would definitely work!
