Oats for breakfast
Do you remember from when you were kids? We use to get a bowl of porridge every once in a while and I was never sure what to think of it. On the one hand it was quite ok (we also got a shit load of sugar in it too) but on the other hand it was so boring! I never really had it anymore until rolled oats become the next fashion thing. And as it turns out: I love it! I do usually go for the steel cut oats which are a bit coarser than rolled oats.
That also means you need to usually cook it a little longer but it will still have more bite than your average rolled oats. It is supposed to be healthier too although I wouldn’t be able to tell you why (need to look it up) This simple recipe with oats can be juiced up to your heart content.
Oats with nuts and lemon
Ingredients
- 200 ml coconut milk
- 40 gram steel cut oats
- 4 dates stones removed
- 40 gram unsalted roasted nuts roughly chopped
- 1 lemon
- 1 tbsp coconut flakes
Instructions
- Place the coconut milk in a saucepan and mix with the oats. Bring this to the boil and leave to boil for about 5 minutes. (or longer if you prefer them softer)
- As soon as your oats are cooked to your liking, place in a bowl and sprinkle with the chopped dates, the nuts and the coconut flakes
- Grate some of the lemonzest over the bowl and squeeze a bit of lemon juice over the dish. Eat straight away.
