Patatas bravas is one of those typical dishes that we always order when we’re out on a tapas night and also one of the dishes that is never absent when we have a tapas night at home. This is great to put on the table for new years eve for instance. Nice and solid food to prepare for an evening with a lot of booze!
As a guideline I used the recipe from BBC Good Food
To be sure that your potatoes will be soft, I precooked them first for about 5 minutes. The potatoes were perfect but I used to much of the tomato stuff on top. This made the flavor of the potatoes themselves a little lost. Despite that, the whole bowl went down well. Nothing left.
Al in all a really good dish, but be careful with the sauce and serve in a separate bowl if necessary.
Patatas bravas
Ingredients
- For the potatoes
- 900 g potato
- 2 tbsp oliveoil
- For the sauce
- 3 tbsp oliveoil
- 1 onion peeled and cut
- 2 gloves of garlic finely chopped
- 200 gr tomatocubes from a can
- 1 tbsp tomato paste
- 2 tsp piment of smoked paprika powder
- 1 pinch of chili powder
- 1 pinch of sugar
- chopped parsley for garnish
Instructions
- Prep
- Preheat the oven to 200 C
- Finely dice the onion and fry slowly in a frying pan with a bit of oil until translucent.
- Add the chopped garlic, tomatopaste, tomato cubes and some salt. bring this to the boil
- Add the chili powder, paprikapowder and sugar
- Stir through and than leave to simmer for about ten minutes until everything is soft.
- Remove from the fire and set aside
- About ten minutes before serving, put the sauce on a low heat to warm through. Peel the potatoes and cut them in dice of about 2 x 2 cm.
- Pat them dry with kitchen paper.
- Equally divide them across a baking tine and pour olive oil over it.
- Add pepper and salt and mix it all well. Adding a few twigs of rosemary is also a good idea if you have any lying around.
- Put the baking tray in the oven and bake the potatoes for about 40-50 minuten until golden brown. Check every 20 minutes if they're still ok. And shake them around a bit when checking too.
- Put the baked potatoes in cute little bowls and add the heated tomato sauce on top. as mentioned; don't put all the sauce on at once. It can be a little overpowering.
- Add some of the chopped parsley and serve with little forks
