It seems to be a thing, loaded fries, loaded potatoes, loaded whatever and yes, I’m joining in this trend with these loaded sweet potatoes. But this is a version you can eat without ever feeling guilty! Not that I think you should feel guilty for eating anything but that’s beside the point.

Why You’ll Love This Recipe
Sweet roasted potatoes, topped with ground meat and fresh tomatoes and served with a delicious creamy sauce. I mean; do I need to say more? This easy dish does take a bit of time as the roasting in the oven is not quick. The good news is that you can also make this on the barbecue if the weather allows!
Recipe Ingredients
- sweet potatoes – you can use both the white ones and the orange ones, although I have not tested it with the white sweet potato. Regular potatoes are also an option
- tomatoes – I love using different kinds of tomatoes here. Small ones are easy or just chop up larger ones
- ground meat – I used beef but a mixture is fine too. You can also easily turn this into a vegetarian dish by using the vegetarian equivalent.
How To Make Loaded Sweet Potatoes
First step and the longest one is to roast the sweet potatoes in the oven. This is best done by brushing the skins of the sweet potato under running water so they’re clean. Poke a few holes in the sweet potatoes either with a sharp knife or a fork. And roast for about 30-40 minutes. Depending on the size of your sweet potatoes. If you would choose to use regular potatoes, keep in mind that those take even longer. Loaded sweet potatoes will be quicker.
Once they’re roasted it’s a matter of cooking the ground meat, slicing the tomatoes and whisking the sauce together. It’s a pretty simple recipe! Loaded Sweet Potatoes
Ingredients
- 4 sweet potatoes
- 300 gram minced meat
- 1 onion chopped
- 1 clove garlic minced
- 1 yellow bell pepper in cubes
- 100 gr cherry tomatoes quartered
Sauce
- 3 tbsp mayonnaise
- 1 tbsp chives finely chopped
- Zest of 1 lime
- Juice of 1/2 lime
- Pepper and salt
Instructions
- Preheat the oven to 200˚C (400˚F) and brush the skin clean. You do not need to remove the skins.4 sweet potatoes
- Place into an oven dish and use a fork to poke a few holes in the sweet potato.4 sweet potatoes
- Roast in the oven for 30-40 minutes or until you can easily insert a fork into the flesh.
- In the meantime heat a pan with some olive oil. Fry the onion until translucent. Add the garlic and the bell pepper and cook until done.1 onion, 1 clove garlic, 1 yellow bell pepper
- Add the minced meat and brown until cooked through.300 gram minced meat
- Make the sauce by combining the ingredients and use pepper and salt to taste.3 tbsp mayonnaise, 1 tbsp chives, Zest of 1 lime, Juice of 1/2 lime, Pepper and salt
- Divide the roasted sweet potato over four dishes and top each potato with the meat mix. Add the tomatoes to it and serve with the sauce.100 gr cherry tomatoes
