Chipotle chicken burger
This burger was once part of some kind of burger contest for a mayonnaise brand. And while I didn’t win (can you believe it?) this chicken burger is still one of my all time favorites. Now a good burger is something we all like. Most of the time it’s made with beef, so I wanted something else and made this with chicken thigh. You do need the extra fat of the thighs so don’t make this with chicken fillet. That will be dry and not so good.
What goes into the chicken burger?
Now to make the chicken burger you need the following ingredients:
- garlic
- chipotle (in adobo sauce is best)
- spices
- onion
- egg
- panko (Japanese bread crumbs)
For the topping you can use whatever you like but I love using guacamole for something fresh and a slice of melted cheddar and some crispy bacon on top too. Now the key for making this delicious is to give the chicken burger a coating of panko. If you don’t know panko; it is a kind of breadcrumb but it is not as fine as regular breadcrumbs. Making it perfect to create a crunchy outside coating.
Add the chipotle for spicyness
I love the smoky flavor of chipotle and I think it really works well in this chicken burger. If you’ve added all the spices, onion, garlic and chipotle but you’re not sure if you’ve used enough pepper and salt you can double check by taking a tiny portion of the meat mixture and bake that quickly in a pan. Once cooked you can test it and adjust the seasoning where needed.
That’s better than finding out too late that you didn’t get it right.
Make your own ground chicken
Now part of this chicken burger recipe is the fact that you add the chicken thighs to the food processor and you mix it yourself. Of course you could buy ground chicken but the problem with that is that it usually contains a shit load of things you don’t need. You want the chicken and making it yourself is super easy. Plus you blend the chicken with the spices at the same time.
Add more flour if needed
Now the meat of the chicken combined with the rest might be a bit too soft. It will still be allright in the end but if it is too soft to handle you can opt to add a bit more flour or even panko into the meat until you can handle it. Mine was pretty soft too but once coated and baked it was the perfect consistency.
It’s a pretty simple chicken burger recipe and baking the chicken patties until golden brown is best done in a mix of butter and oil. You should roughly need 3-4 minutes each side and once you’ve baked one side flip it over, add the slice of cheddar and let it bake on the other side while the cheddar melts on top.
Add crispy bacon
You can add some crispy bacon as well or – if you want to go all out – you can add a fried egg on top as well. Or use your own favorite toppings! Enjoy!
Chicken burger with guacamole and chipotle
Ingredients
- 500 gram chicken thigh in cubes
- 2 large chipotle peppers I used the ones in adobo sauce
- 2 cloves garlic
- 1 onion finely diced
- 1 tsp salt
- 1 tbsp flour
- 1/2 egg whisked
- freshly ground black pepper
- 1/2 tsp ginger
- 1 pinch of smoked paprika
- few tbsp of panko = Japanese breadcrumbs
Topping
- 4 tbsp guacamole
- 4 slices bacon
- 4 slices cheddar cheese
- 4 tbsp mayonnaise
- 4 tbsp tomato ketchup
- lettuce of your choice
- 4 hamburger buns

- Food processor
How to make the chipotle chicken burger
- Turn on the oven to grill the bacon. You can also do this in a frying pan of course, whatever you find easiest. The buns you can also grill in the oven or in a frying pan or grill pan.
- But the chicken thighs into the food processor and add garlic, onion, salt, pepper, ginger, paprika and the chipotles to it. Process until you have a ground chicken mix that is not too fine but also not too chunky. It needs to stay together. Add a tbsp of flour and half an egg. Stir together.
- Fry a little bit of the mixture (like a dime sized mini hamburger) of the chicken mixture to taste if it is to your liking. If not, add pepper or salt.
- In the meantime make your guacamole according to the recipe.
- Grill the bacon in the oven and grill the buns at the same time. Pay attention as it can go really fast all of a sudden. Let the bacon drain on kitchen paper.
- Shape a burger of your chicken mixture. This is a little tricky because the mix is a little difficult to handle and sticky, but it will all be allright once you bake it. If it really is too soft to handle add some more flour. Lay the burger into the panko (which you put on a plate to prepare) and roll it through the crumbs.
- Heat a pan with a little oil and a bit of butter and bake the burger golden and cooked. This should take about 3-4 minutes each side. Add a slice of cheddar at the last minute and let that melt along with the burger.
- Take your toasted buns and spread the bottom with mayonnaise. Put the lettuce on top and on the lettuce add a good layer of guacamole. Put the burger on top of the guacamole and cover with the pickled peppers and the bacon. End with a good squeeze of tomato ketchup and a good spoon of Hellmann's.
- Eating the burger is something else entirely and the idea is to grab the burger with two hands and fold your fingers around the edges so the content cannot slide out of the burger. And than take a big bite!
