Delicious grilled prawn recipe with a chipotle aioli

Looking at these grilled prawns I get a little hungry. I mean how good do they look? The prawns are marinated and served with a delicious chipotle aioli. The perfect shrimp recipe on the barbecue!

Now let me start with the good news; even if it not barbecue season you can also make these grilled prawns on your grillpan or even a regular skillet will do. But they are best on the barbecue or outdoor grill. That smoky flavor is just something that is hard to fake. 

What Do You Need To Make The Grilled Prawns?

You’re gonna want to use large fresh prawns for making this. Tiger prawns or king prawns (or whatever other jumbo prawns you can find) are a good option as you need large prawns. Small shrimp won’t work so well. You will also need some wooden skewers or bamboo skewers. If using wooden or bamboo make sure to soak the skewers for about an hour prior to grilling them. That way you can make sure that the wood doesn’t burn on the barbecue. Of course you can also use metal skewers if you want to make sure they stay intact!

Make sure to clean the prawns before putting them on the skewers. Use a sharp knife for that but leave the prawn’s head and the skin on. Otherwise it will go to fast and you want juicy shrimp. 

Marinade

For making the marinade you need garlic, shallots, lime, honey, tomatoes and chopped fresh coriander. You blend all of that together with a little splash of olive oil in the food processor and blend it to a paste. It’s a simple marinade but so good!

You now place the skewered prawns in a tray and mix about 2/3 of the salsa over the prawns. Make sure all prawns get a bit of the marinade. Leave to marinate for about an hour. You can use the rest of the salsa to serve with the prawns after they are barbecued.

Grilling The Prawns

Now once they’ve been marinated it is time to put them on the grill. These are seriously the most amazing grilled shrimp I’ve had ever. Grilling them with the head of the prawn on means a little more work before you can dive in but it also means extra flavor. Just place them on the barbecue until they are golden brown. On a very hot grill this will take no more than 2-3 minutes. 

Serving The Grilled Prawns

Now serving the grilled prawns you can simply just squeeze a bit of lemon juice on top. They will be delicious regardless. But you can also make a lemon garlic butter or make the chipotle aioli I would suggest with this recipe. Making the chipotle aioli is as simple as taking aioli and mixing it with some lime juice, black pepper and a tablespoon of chipotle sauce. Serve them with some crusty bread and you have one of the best prawn recipes! A simple chilli sauce will also be delicious. Or make this chimichurri for a totally different flavor.

Additions And Variations

Of course if you’re serving this as a main course you might want to add something more. A good salad (like this classic potato salad will work really well. I love adding something like this Greek salad to the grilled prawn recipe. Now the only thing we need is good weather. Which has been sadly lacking here the last couple of week (months!)

Ingredients

  • 12 large prawns
  • 1 shallot
  • 2 limes
  • 3 cloves of garlic
  • 2 tbsp chipotle
  • 3 tbsp honey
  • 50 g chopped coriander
  • 2 tomatoes

for the chipotle alioli

  • 4 tbsp aioli
  • 1 tbsp chipotle
  • Half a lime
  • Salt and pepper to taste

How to make the grilled prawns

  1. In a food processor, blend the garlic, shallot, chipotle, lime juice, honey, tomatoes and coriander.
  2. Thread the prawns onto a large skewer. Start at the tail and push the skewer through to the head so that you can easily cook the prawns on the barbecue.
  3. Mix about two thirds of the salsa with the prawns and stir well until the prawns are well marinated. Leave to marinate for an hour. The rest of the salsa is delicious with the prawns after barbecuing.
  4. Light the barbecue and cook the prawns until they are nicely red and charred.
  5. To make the chipotle mayonnaise, mix the lime juice with the aioli and season with salt and pepper.
  6. Serve with crusty bread and fresh coriander.
