Delicious and easy granola bars

These granola bars are pretty easy to make and taste great. You can even eat them for breakfast or bring along as an easy snack

Granola bars are one of those easy to make and delicious foods that are perfect to bring with you on the road or to enjoy as an easy snack. This recipe makes about 12 pieces which you can keep in the fridge or freeze for later use.

Funny enough I really like granola bars (and granola in general), but I hardly ever make it. I can’t explain it, as every time I do make them like with this easy granola bar recipe I absolutely love it. Maybe that is the issue. I like it so much that I overeat them. I don’t know. Whatever the case, these granola bars are absolutely worth making.

Super easy to get together and the only part that takes a little longer is the roasting of the rolled oats in the oven.

Now the funny part about these granola bars is that they are from a book by the author Rens Kroes. You might not know Rens Kroes but she is the sister of the famous model Doutzen Kroes. Who I believe is famous in the US as well. Her sister is a health coach and has produced a couple of cookbooks. This recipe is from one of the cookbooks. I kind of forgot the name, but it’s filled with gluten free and delicious recipes.

The granola bars are just an example. Now for making these bars you need a couple of ingredients:

  • rolled oats – other oats will also do except instant oats.
  • nuts – use any kind of nuts you like
  • nut butter – any kind is fine
  • seeds – you can use a mixture of seeds like sunflower seeds, pumpkin seeds, hemp seeds or chia seeds.
  • dried fruits – again use what you like. I went for cranberries, goji berries, raisins and apricots but any kind will do
  • medjool dates
  • honey
  • spices – cinnamon, ginger,
  • coconut oil
My tips

Honey is the only non vegan ingredient in these granola bars, so you can easily convert them into vegan granola bars by skipping the honey and replacing that with maple syrup instead.

Making the granola bars

Making these delicious bars is really simple to do. You roast the oats, heat the nut butter so it becomes more liquid and mix the other ingredients together in a food processor. You make sure it is a crumbly and sticky mass but not too fine. You don’t want to turn it into one mass of ingredients, you still want to be able to see the various ingredients but it does need to stick together well.

Now you press it firmly into a baking tray and place it in the oven. It needs to set for about 2 hours and then you will be able to cut it with a sharp knife. It’s delicious as a quick breakfast on the go, a snack or freeze it for later use. You can store the granola bars for approximately two weeks in an airtight container.

Ingredients

  • 85 gr unsalted nuts mixed
  • 190 gr medjool dates
  • 120 gr rolled oats
  • 70 gr nut butter of your choice
  • 2 tbsp honey
  • 65 gr mixed seeds hemp seeds, sunflower, chia, pumpkin, flaxseeds
  • 50 gr mixed dried fruits like cranberries, raisins, apricots and/or goji berries
  • bit of sea salt
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 2 tbsp of coconut oil

How to make the granola bars

  1. Preheat the oven to 200˚C/400˚F. Place the oats on a baking tray and roast for about 15 minuten or until golden. Leave to cool.
  2. In the meantime place the nuts together with the dates (pits removed) into the food processor and turn till you have a sticky mass.
  3. Heat the nut butter with the honey in a small saucepan and add this to the date mixture and add all the other ingredients to it as well in the bowl. Knead it all together till you have a sticky mix.
  4. Spread the mixture out on a baking tray or low ovendish and press with the back of a spoon. This is important or they will fall apart.
  5. Place the bowl in the fridge for at least two hours and cut into cubes with a sharp knife
  6. Keep in the fridge in an airtight container and you can enjoy them for two weeks.
