Easy Christmas Dessert
I have been making this Christmas dessert for years and it is always a hit. And not just with me, because many readers make it en masse during the holidays. And every time it is delicious, easy and a favorite with everyone. So as far as easy Christmas desserts go, this is definitely a winner.
Easy Christmas Dessert with Few Ingredients
Now the fun part about making this dessert is that you do not need more than 4 ingredients to make it. And those are double or heavy cream, meringue, lemon curd and some kind of fresh fruit. I love adding red berries as they make everything look like Christmas right away.
Now – that said – it is also easy to add ingredients to it if you want to make it look fancier. You can add some grated white chocolate or dark chocolate, add a drizzle of cranberry sauce over the top of change the meringue for different christmas cookies. You can add them or replace them for any kind of sugar cookies. That will also give it more of a crunch.
If you are already working on your Christmas menu, you are on the right track for your Christmas dessert. And since this is often the element people are most stressed about, you can check it off. Mission completed for this holiday season.
Homemade or store-bought
Now, of course, you can make any dessert as complicated or as simple as you like. I used store-bought meringue here, and I also used store-bought lemon curd. Depending on where you live you will probably have different brands of lemon curd. It is readily available at most grocery stores and can usually be found on the shelf with jams and other spreads.
Easy Christmas Dessert
Making your own is also an option. I have a tasty recipe for lemon curd, but frankly, I like to keep things simple at Christmas. So in this case, from a jar. It’s maybe not the most impressive dessert but it will definitely make your life easier and it’s super delicious.
Adding the lemon curd
Lemon curd is often quite stiff when you use it from a jar. By whisking it at the same time as the cream, you solve this problem immediately. You beat the cream and you have a nice smooth mixture. How much lemon curd you add is a personal choice. I usually use 3-4 tablespoons per 200 ml of whipped cream.
Making it look pretty
Then it’s a matter of taking a nice glass (glass is nice, as you can see all the layers) or filling a bowl. How you build the layers is entirely up to you. I like to usually start with a small layer of meringue crumbs, top that with some of the cream and curd mixture and than finish with some fruit and some more meringue crumbs. It’s a very similar quick dessert to my Raspberries and Mascarpone Cream dessert.
FAQ Easy Christmas Dessert
This may be an easy Christmas dessert to make, but there are a few things to keep in mind. Just because it’s so nice and quick, you don’t want to make it too far in advance. You don’t want the meringue to lose its crunch or the whipped cream to start splitting. So you want to make it fresh. It literally only takes a few minutes.
Any soft fruit will do. I usually make it with raspberries, but you can also use mango, blueberries, passion fruit, strawberries, or peaches. Red fruit always looks the coziest at Christmas, though. But anything is possible.
Try using dulce de leche. This combination is a little sweeter and less fresh, but you can fix that by adding fresher fruit or a little more fruit. Instead of dulce de leche, you can also use a “normal” caramel sauce. I would put it on top instead of through it. Or – this is also very tasty and nice and Christmasy – try it with my cranberry sauce! Of course, you can also use orange curd or any other curd you can find.
You can use a different kind of cookie or something like red velvet cake, brownies or chocolate cake. You’ll miss the crunch but it is definitely a good option.
I find it easiest to use a pastry piping bag. You can buy them at the grocery store or online. You put the whipped cream in the bag (with or without a nozzle) and quickly pipe it into the glasses.
