Sushi in a glass with spicy avocado

The perfect easy way to serve a sushi style dish. Just place it in a little glass! It looks fun and is easier than making your own sushi.

This quick appetizer is actually sushi in a glass, served with spicy avocado, wasabi and cubes of fresh salmon fillet. It’s perfect for serving for a Christmas dinner or an Easter dinner. Easy to prepare and so delicious!

Want to serve sushi for the holidays, but don’t feel like wrapping it in rolls and sticky rice? Then this recipe for sushi in a glass is for you. It has all the elements of a delicious sushi roll, but served in little glasses. Not only is it easy, but it looks super festive.

This recipe is from the book Hemels by Alexandra and Ria. The book was once self-published, but is no longer available. I did the photography for this project with all the heavenly recipes. Including this sushi in a glass.

Preparation

The only cooking you need for this dish is to make the sushi rice. Exactly how much you need depends a bit on the size of the glasses you use. I wouldn’t use too large glasses if you’re going to serve this as an appetizer. Too small is not practical either, because then you have to do a lot of fiddling to get everything in. So something in between is the best solution, but try it if you have to. Then you know what to expect. The 200 grams of sushi rice (weighed uncooked) is on the generous side.

Wasabi

To make the avocado cream nice and spicy, use wasabi. Season the avocado well with salt and pepper. The rest of the ingredients in your sushi in a glass do not have a pronounced amount of flavor, so it can have some. Sprinkle a little salt and pepper on the salmon before putting it in the glass.

Don’t overdo it, as you will also be drizzling some soy sauce over the salmon just before serving. Of course, this also adds an element of salt. I love salmon as a quick appetizer such as this gravlax or the salmon with cream cheese.

Sushi in a glass with creamy avocado

Ingredients

  • 200 gram sushi rice
  • 300-400 ml water depending on the rice
  • 2-3 tbsp rice vinegar
  • 1 avocado ripe to eat
  • 2 tsp wasabi or more to taste
  • 2 sheets nori
  • 200 gram fresh salmon filet cut into 1 cm cubes
  • 1 tbsp black sesame seeds
  • soy sauce

Steps on how to make the sushi in a glass

  1. Check the packaging of the rice to see how long it needs to cook for and prepare accordingly.
  2. Leave the rice to stand for another ten minutes, with the lid on. Stir the rice vinegar through the rice. Leave to cool completely.
  3. Peel and crush the avocado and stir the wasabi through. It can be quite spicy as the rest of the ingredients are quite mild in flavor.
  4. Cut the nori sheets to small square pieces.
  5. Get a small serving glass and start with a layer of nori. Wet your hands a bit and put a bit of rice on the nori. With a spoon, add some of the avocado on top of the rice. On top of that you put the salmon. Repeat the layers until the glass is full or the ingredients are finished. Finish with the salmon last. Sprinkle some black sesame seeds on top to finish. Either keep in the fridge until ready to serve or eat immediately. Drizzle some soy sauce over the top before serving.
