It’s coming up fast now… That month of the year that everyone gets busy finding easy and festive recipes to please the entire family.. or the ultimate recipe for a nice evening with friends. Have you got your Christmas already planned out or are you still waiting for Thanksgiving to happen? Or as here in the Netherlands Sinterklaas… We don’t have kids so Sinterklaas kind of passes us by each year even though we have been celebrating our own version of it for more than ten years now with friends. We call it Sinterkerst (kind of like a mix of Sinterklaas and Santa so to speak)

I will try – in the coming period running up to Christmas – to serve you delicious, easy and festive meals for some december inspiration. Some – like this one – are from the old archives. I made this dish all the way back in 2011. And I can still remember how much I liked it! (and yes that picture is also taken in 2011. Need I say more?) It’s ideal to start a festive evening of. And pomegranate will always be one of my favorite fruits. It is so pretty and that lovely red color goes so well with the december month. The recipe is literally done in a few minutes. Perfect for an evening without stress!

Creamy goatcheese with pomegranate

Prep time 10 minutes
Total time 10 minutes

Ingredients

  • 150 g pack soft rindless goat's cheese
  • 250 g tub ricotta
  • 50 g pomegranates seeds from a tub
  • small bunch chives snipped
  • 1 tbsp clear honey
  • 2 tsp red or white wine vinegar
  • loaf of crusty bread to serve

Instructions

  1. Mash the goat's cheese and ricotta together in a bowl, then use a spatula to roughly spread over a large plate. Scatter with the pomegranate seeds and chives and set aside until ready to serve.
  2. Stir together the honey and vinegar, then as you're about to serve, drizzle over the plate. Enjoy with crusty bread.
