Cauliflower rice with kale and feta

Delicious and super easy to make vegetarian recipe

It’s not secret I am a big fan of cauliflower and cauliflower rice. In this cauliflower rice with kale I combined it with feta for a great dish. Loaded with vegetables!

Cauliflower rice with kale

This easy and delicious dish with cauliflower rice and kale came about when I was working in the studio. It had been a particularly stressful week and work was just insanely busy at the time. I find that whenever I am really busy I start to eat rather unhealthy. Quick meals, no time for loads of vegetables. You probably know what I’m talking about.

But that particular day I felt I needed to make something healthy that was also quick and delicious. And I had some leftovers of cauliflower and kale so the combination was easily made.

Add some oil

Now obviously adding cauliflower rice and kale together might be a bit dry so you do need either a good amount of olive oil or – like I did – lemon oil. Alternatively if you do not have lemon oil, you can squeeze some lemon into extra virgin olive oil and add that to the cauliflower rice with kale.

With feta

I love adding feta to salads and this is essentially a salad of sorts. Baking both the cauliflower and the kale briefly it still has a lovely crunch but you will lose the rawness of both of the vegetables. Since I used this for dinner, I wanted it to be warm. Also the feta melts a bit through the vegetables if you cook them. Which makes this cauliflower rice with kale even better.

For some crunch I added croutons. I had also some bread leftover so I made this into croutons, but if you don’t want to add bread you can add some chopped nuts instead for added crunch.

Cauliflower rice with kale and feta

Ingredients

  • 1/2 cauliflower
  • 200 g kale chopped
  • 2 slices bread
  • parmesan cheese optional
  • 50 g feta
  • lemon oil
  • pepper
  • salt
  • oil for baking

How to make the cauliflower rice with kale

  1. Break the cauliflower apart and place in the bowl of a food processor. Turn this to coarse crumbs, resembling the size of rice.
  2. heat a large frying pan and ad a bit of oil. Bake the cauliflower for about a minute before adding the kale. Bake this together for a few more minutes. Add pepper and salt to taste.
  3. The croutons you make by slicing the bread. Bake this crispy in quite a bit of oil. Also very tasty is to add a bit of parmesan to the pan.
  4. Serve the cauliflower rice by crumbling the feta over the top and adding the croutons. Sprinkle liberally with the lemon oil.

  1. Somehow I fell off your email list. I was cleaning out my email and found one of your posts and I thought, what ever happened to Simone. Little did I know you kept trucking along and I missed the boat. LOL. I wish you all the best in which ever path you choose. 

    This recipe looks like my idea of a perfect meal.
