Super easy and delicious salad

Do you jump when you hear the word ‘carrot’? Are you dreading the thought of having to eat vegetables? Or are you currently doing a whole30 and are in need of some needed inspiration? Well, look no further. This delicious and super easy carrot salad with minced meat is just the thing you’re looking for!

Whenever I do a whole30 I make sure to incorporate this delicious carrot salad with minced meat. At least once and usually more than that. It is so simple to make and as a bonus; it is also really easy to bring along to work.

There are no greens in there that can wilt along the way, so I call that perfection. I like to spice mine up with some garam masala and while it is probably in no way anywhere near real Indian food, it does taste like it.

Simple

I kept my version pretty plain with just some fresh herbs, the meat and the grated carrots. It’s delicious on it’s own, but if you want you can easily spice it up by adding some nuts or raisins to the dish. As for the dressing; I used olive oil combined with lemon juice but for some reason the lemon was more sour than normal. Since I was doing a whole30 honey was not allowed so instead I added a bit of orange juice to sweeten it just a tiny bit. Just some salt and pepper and you’re good to go.

The good thing about this salad is also that it becomes better once you leave it in the fridge for longer. That makes it perfect to make a supply for two days. I haven’t tried to freeze it but I wouldn’t be surprised if that works really well as well. If you do decide to freeze the carrot salad with minced meat than make sure you leave out the perishables like the fresh herbs.

Carrot salad with minced beef

Ingredients

  • 250 gr carrots
  • 300 gr of minced beef
  • 1 tsp of garam masala
  • mint
  • coriander
  • sesame seeds
  • salt
  • pepper

For the dressing

  • 1 tbsp lemon juice
  • 2 tbsp oliveoil
  • 1 small onion finely chopped
  • 1/2 tsp ground ginger
  • optional; orange juice to taste

Titel

  1. Grate the carrots either by hand or in a machine. Mix the meat with the garam masala and some salt and pepper and mixed it well. Bake the minced meat in a frying pan and crumble it while baking.
  2. Make the dressing by mixing the ingredients and tasting if it is not too sour. I added a bit of orange juice into mine as the lemon was particularly sour. I would normally have added a bit of honey to take the sting out of it but since that wasn’t an option during the whole30 I used the orange juice.
  3. Mix the dressing through the carrots and add the minced beef. Season if needed and sprinkle with some sesame seeds.

    I would love this. I make a carrot salad quite often but I’ve never put beef mince in it. Good idea for a lovely lunch.
