Caribbean noodles with chicken and pork

Delicously stir fried noodles in a Caribbean way. With Chicken and Pork and a spicy flavor to finish it off.

This super delicious and easy to make caribbean noodles are made with chicken and pork and are a great easy dinner.

I have a love for all things noodle. Like this delicious bowl of noodles with purslane and enoki mushrooms or what about these noodles with chicken and peanut sauce? These noodles are generally called Surinaamse bami here in the Netherlands, but I couldn’t really find a good translation for that in English so I went with Caribbean noodles. But whatever you call them, it’s delicious, spicy and not too complicated to make. It does involve a few steps which I’ll highlight below.

For making this dish you use both chicken and pork. If that is too much to your liking you can remove one or the other. So only the chicken would be delicious too and somewhat easier to make.

Marinating the chicken

The first thing you do is to marinate the chicken for the Caribbean noodles. It’s not a complicated marinate but basically it is just pepper and salt and Chinese 5 spice which you let sit for a bit. The pork is seasoned with salt and pepper as well and roasted in a dry pan.

For cooking the noodles you add a whole red pepper into the boiling water. That will spice up the noodles itself. It’s subtle so it won’t be too spicy but it does add flavor. If you want to skip this step that is also totally fine.

Tossing with soy sauce

Now the key part of making these Caribbean noodles is the tossing into the soy sauce and the sweet soy (kecap manis) In addition you crumble half a stock cube through the noodles as well.

If you’re a fan of spicy dishes you might want to add a bit more chili. You can use spicy soy sauce or add an extra chili pepper or chili flakes.

Salty

The stock cube already ads quite a bit of saltiness to the dish so you don’t really need extra salt but make sure to taste and see if you’re good with what’s inside!

Ingredients

  • 500 gr noodles
  • 1 red chili whole
  • 300 gr chicken breast sliced in thin strips
  • 300 g pork chops deboned
  • 1/2 bunch coriander finely chopped
  • 2 cloves garlic finely sliced or squeezed
  • 1 onion finely diced
  • 1 leek sliced in thin rings
  • 35 g tomato puree
  • salt and pepper

Herbs and such:

  • 1 tsp freshly ground pepper
  • 1 tsp Chinese 5 spice
  • 2 tbsp sweet soy sauce kecap manis
  • 4 tbsp soy sauce
  • 1 chicken stock cube

Instructions

  1. Rub the pork with oil and the freshly ground pepper and some salt or use your own favourite herb mix. Roast or grill the meat in a dry frying pan, grill pan or contact grill. Then put the meat aside for later use. Take a bowl and mix the chicken meat with salt and pepper, the five spices and let the flavors infuse for a while.
  2. Boil the noodles to the package instructions and throw in the red pepper in the boiling water. Let the noodles drain (keep the red chili pepper). Mix the noodles in a big bowl with 2 tbsp of soy sauce, 1 tbsp of sweet soy sauce (or hoisin) 1 clove of crushed garlic and 1/2 a stock cube (pulverised). Stir through the noodles.
  3. Stir fry the sliced onion with some oil in a big pan. After two or three minutes add the sliced leeks and concentrated tomato paste and bake them. Turn the heat down and let it simmer for a few minutes.
  4. Turn the heat to high again and add the marinated chicken. Stir fry for a minute or three and add the remaining soy sauce, sweet soy sauce, garlic and the second half of the stock cube. Then add in the chili you used before with the noodles and let the sauce cook and thicken for about 6 to 7 minutes.
  5. Remove the chili from the sauce and add the noodles. Hussle and stir fry everything. If it’s too much for the pan, just stir fry everything in two badges.
  6. Thinly slice the pork meat. Stir the finely sliced cilantro into the noodles and serve the noodles on a big plate with the pork slices on top.

  1. Sounds good! I took care of the problem with the misses invading the dude kitchen in my house as I just built another kitchen to my personal specifications with my favorite induction stove, convection oven, pots, pans, grill, all my favorite appliances, knives and tools! Problem solved!!! I make my own pasta—freshly made pasta takes about 25 min with KitchenAide attachment and food processor start to finish and takes about 3 min to cook but at least you know what is in it and you can add spices to the pasta to amplify up the taste to match the sauce.
