This raw broccoli salad is quick to put together and in combination with the ginger poppyseed dressing it is a different way of eating your broccoli! Love adding a bit of pickled red onions, which looks great and tastes even better.
Raw broccoli salad
This recipe for a raw broccoli salad was the first time I ever ate broccoli raw. And I was blown away by the flavors. So good! The book this recipe comes from is a golden oldie by Hemsley + Hemsley. Two sisters, who I am not sure are still working together but whatever the case, this book was a winner. All the recipes where gluten free, lactose free etcetera. but most of all they are delicious.
Now for making this raw broccoli salad you add goji berries which are soaked for a bit first. I have to confess that goji berries are not my favorite thing in the world. They’re pretty bland but in this salad they do work. If you don’t want to splurge on goji berries you can replace this with an apple. Very different but also quite delicious.

And the book is filled with recipes I seriously want to try. I’ve got to say that I was having second thoughts about eating broccoli raw. I mean, I like cauliflower, which is a cousin of sorts, but have you ever tried eating raw broccoli? It’s just a lot dryer and so I was curious to find out how a raw broccoli salad would behave. Step one is of course to cut the broccoli finely. Using a food processor is the easiest thing to do this. Than to mix it with some delicious poppyseed and ginger mayonnaise and the soaked goji berries and you have a killer salad. I honestly didn’t think I would enjoy it as much as I did.

Broccoli salad with ginger poppy seed mayonnaise
Ingredients
- 350 gr broccoli
- 1/2 red onion in thin rings
- 1 tbsp apple vinegar
- 2 tbsp goji berries
- 2 tbsp almonds roughly chopped
Dressing
- 3 tbsp mayonnaise
- 1/2 thumbsize ginger grated
- 1 tbsp poppyseed
- 1/2 tbsp apple vinegar
- seasalt
Instructions
- Cut the broccoli in fine pieces and use the shaving attachment on your foodprocessor to make it small or cut by hand.
- Soak the red onion about 15-20 minutes in the apple vinegar (you can use this later to ad to the salad)
- Soak the goji berries 10 minutes in warm water until the become soft and plumb.
- Use a large bowl to mix the broccoli, soaked onion, goji berries and the chopped almonds.
- Make your own mayo or use three tbsp and mix this with the ginger, half a tbsp of apple vinegar and the poppyseeds. Add seasalt if needed.
- Mix it all together and enjoy!
