Yay! It’s pumpkin season! So what better moment to highlight some of my all time favorite pumpkin recipes for this fall season. While you don’t really have to wait for autumn to come around when you’re talking about pumpkin, it is still the time of year when I go crazy with making all things pumpkin.
Pumpkin recipes
From sugar pumpkins to kaboocha pumpkins, from jack o lantarn pumpkins to whatever other pumpkins are out there, there is so much to choose from. I did a taste test a few years back. I was always under the assumption that a pumpkin was a pumpkin but boy was I wrong.
Together with a friend we created two easy pumpkin recipes with 5 different kinds of pumpkin. We made a pumpkin soup and we roasted pumpkins in the oven. We than sat down and taste tested them all in a line-up.
No more butternut squash
The funny part of this test was that I previously used a butternut squash most of all. It is always available, easy to work with and since I figured it wouldn’t make a difference, I didn’t think twice about it. But after this taste I found out there is a world of difference between all those pumpkin colors. So no more butternut squash for me. We both agreed that our least favorite flavor was the butternut. My favorite was the blue pumpkin!
Different varieties around the world
The amount of different types are enormous and vary around the world. Take a look at this line up from just one farm in the US. So since I live in the Netherlands it is a bit hard to advise on which to choose, but I’m sure you will be able to find plenty of options where you live. For most of the below pumpkin recipes you will be able to choose most pumpkins.

Beef stew with beer and pumpkin
Pumpkin season is also stew season and this one with delicious carrots, beef and pumpkin combines the two beautifully together. Also easy to make in an instantpot or slowcooker.

Risotto with pumpkin and mushrooms
This creamy vegan pumpkin risotto is delicious and combined with mushrooms it is one of those perfect fall pumpkin recipes.

This pumpkin soup is so delicious! I fell in love with it and in combination with the chestnuts and the mushrooms it’s a great seasonal soup.
